Linda’s Casserole–red potatoes with seasonings in a sour cream sauce and topped with melty cheese. Make this fast in the Instant Pot.

Linda’s Casserole

Linda’s potatoes are a super delicious, easy, from-scratch potato side dish. With lots of flavorful seasonings this dish is just over-the-top tasty. My son and I both gave it 2 thumbs up!

The Instant Pot is a great vehicle to cook potatoes in just a 4 minute pressure cooking time. I love using my steamer basket* to cook the potatoes in and, in my opinion, it is worth having one just for potatoes dishes alone!

Ingredients/Substitution Ideas

  • Red potatoes–or peeled Russets, yukon gold
  • Cream cheese
  • Sour cream
  • Kosher salt
  • Black pepper
  • Onion powder
  • Garlic powder
  • Dried sage
  • Dried rosemary
  • Thyme
  • Crushed red pepper flakes
  • Milk
  • Cheddar cheese–I like sharp

Steps

Pour 1 ½ cups water into bottom of Instant Pot. Add potatoes into a steamer basket and place cream cheese on top. Drop the steamer basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move the valve to venting and remove the lid. Set aside the steamer basket and discard the water. 

Dump potatoes and cream cheese into Instant Pot liner. Add in the sour cream, salt, pepper, onion powder, garlic powder, sage, rosemary, thyme, red pepper and milk. Gently stir to combine.

Sprinkle the cheese on top and let it melt. I like to use an air fryer lid to melt the cheese. Serve and enjoy!

Notes/Tips

  • Serve as a side dish to ham, chicken or turkey. You can also make this a main dish my stirring in ham cubes or cooked chicken and some cooked broccoli.
  • For a baked casserole taste: after you stir in the sour cream and seasonings try scraping the potatoes into a 9×13 inch pan, sprinkling with cheese and baking in the oven at 350 degrees for 20 minutes.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • I like using the Avokado silicone steamer basket*.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • This recipe is gluten free.

Description

Ingredients

Scale
  • 2 pounds red potatoes, cut into 1/2 inch cubes
  • 2 ounces cream cheese
  • 3/4 cup sour cream
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/4 tsp dried sage
  • 1/4 tsp dried rosemary
  • 1/4 tsp thyme
  • Pinch crushed red pepper flakes
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese

Instructions
