Pickleball Casserole–rice, cabbage and Italian sausage make a fast and easy Instant Pot dinner when you’re on the go!

Pickleball Casserole

Pickleball is all the rage! Are you addicted yet? This casserole takes about the same time to prepare as a pickleball game (about 15-20 minutes) and then the cooking time will take less time than a pickleball game! So make it before you play a game and then let the Instant Pot do all the work and come back to eat when you’re ready…the IP will keep your dinner warm for you until you’re ready to eat.

It’s got yummy flavor from the Italian sausage. I always use mild sausage but if you’d like a little heat then use spicy sausage. I love the addition of cabbage which helps you get in some veg and almost tastes noodle-like. I like using converted rice but you can also use long grain white, basmati or jasmine rice. Have fun playing and enjoy!

Ingredients/Substitution Ideas

  • Italian sausage–I used mild
  • Onion–yellow, white
  • Chicken broth–or water and Better than Bouillon
  • Converted–or long grain white rice
  • Hot sauce
  • Worcestershire sauce
  • Garlic salt
  • Italian seasoning
  • Cabbage–I use green
  • Marinara sauce–mezzetta is a good brand
  • Colby jack cheese–or cheddar, mozzarella

Steps

Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion. Brown for about 5 minutes. 

Stir in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. Sprinkle in the rice.

Add in the hot sauce. Worcestershire sauce, garlic salt, Italian seasoning, cabbage and marinara sauce. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir. Sprinkle with cheese. Serve and enjoy!

Notes/Tips

  • Serve with raw veggies and dip.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • This recipe can easily be doubled by doubling all the ingredients and keeping the cooking time the same. This dish freezes well.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • This recipe can be gluten-free if you use gluten-free Worcestershire sauce.
  • Other recipes you can make with Italian sausage are Italian Tortellini Soup and Instant Pot Bev’s Spaghetti.
  • What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.

Description

Ingredients

Scale
  • 1/2 pound Italian sausage
  • 1/2 cup diced onion
  • 1 cup chicken broth
  • 3/4 cup converted or long grain white rice
  • Dash of hot sauce
  • 1 1/2 tsp Worcestershire sauce
  • 1/2 tsp garlic salt
  • 1/2 tsp Italian seasoning
  • 2 cups chopped or shredded cabbage
  • 1 1/2 cups marinara sauce
  • 1/4 cup shredded colby jack cheese

    Karen,
    Can I use Jasmine or Basmati rice instead of converted? Do I need to add more water and time? Recipe sounds really good and I am looking to try it out.

      yes you can and I would use the same amount of water and the same time should be fine also
