Dorcas’ Casserole–an Instant Pot version of green bean casserole made with fresh green beans, cream of mushroom soup and crispy French fried onions.

Instant Pot Dorcas' Casserole

Dorcas’ Casserole

Back in 1954, Dorcas Reilly was working as a recipe developer and manager at Campbell’s Test Kitchen. Her job was to come up with a recipe using two things most people had in their kitchens back then: canned green beans and Campbell’s condensed cream of mushroom soup. She played around with a bunch of different ideas, and after trying things out, she finally came up with the recipe that ended up being a real winner–what we know today as green bean casserole. Her philosophy was that, “food should be fun. Food should be happy.”

I’m taking her recipe today and making it with the help of the Instant Pot instead of the oven. A lot of times on Thanksgiving the oven is being used for other items so making this dish in the Instant Pot could be a better choice to save precious oven space.

Ingredients/Substitution Ideas

  • Fresh green beans–the original casserole has canned green beans but I like fresh better
  • Milk
  • Campbell’s cream of mushroom soup
  • Low sodium soy sauce
  • Fresh cracked pepper
  • French’s French fried onions

Steps

Pour 1 ½ cups of water into bottom of Instant Pot. Add the green beans into a steamer basket and drop the basket into the Instant Pot. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the STEAM button to 1 minute. When time is up move valve to venting and remove the lid.

Move steamer basket out of Instant Pot. Discard the water.

Turn Instant Pot to saute setting. Pour in the milk, cream of mushroom soup, soy sauce and a few cracks of pepper. Whisk well and bring to a simmer. Turn off Instant Pot.

Fold in the green beans and half of the french fried onions. 

If you have an air fryer lid, sprinkle the remaining onions on top and bake at 350 degrees for 3 minutes. If you don’t have an air fryer lid, sprinkle the remaining onions on top and you can place your stainless steel liner into the oven and bake at 350 degrees for 15 minutes. 

Serve and enjoy!

Instant Pot Green Bean Casserole

Notes/Tips

  • Serve as a side dish to your holiday dinners. It also makes a good side dish for any ham, turkey or chicken dinner.
  • Try this recipe with steamed asparagus of green beans.
  • I halved this recipe since I was only serving 3 people. You can easily cut the recipe in half or double it.
  • If you’re holding this dish on warm to serve later then don’t add the crispy onions on top until you’re ready to serve. Just go through step 5 and then do step 6 right before serving. 
  • I used my Duo Crisp 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

An Instant Pot version of green bean casserole made with fresh green beans, cream of mushroom soup and French fried onions. 


Ingredients

  • 24 ounces fresh green beans, washed and trimmed
  • 1/2 cup milk
  • 1 (10.5 oz) can Campbell’s cream of mushroom soup
  • 1 tsp low sodium soy sauce
  • Fresh cracked pepper, to taste
  • 1 1/3 cups French’s French fried onions

Instructions

    How would I put fresh mushroom in the bean casserole

      I would sauté the mushrooms right before you add the milk and cream of mushroom. I wouldn’t cook them with the fresh green beans as they would over cook. Looks simple and easy recipe.

      I would saute the mushrooms in the Instant Pot in a bit of butter before you whisk together the milk, soup. Should be great.
