Description
Instant Pot or slow cooker ground beef with beans and flavored with bacon and finally topped off with barbecue Fritos and sour cream. A flavorful, easy, protein-filled supper.
Ingredients

- 1 pound lean ground beef
- 1 medium onion, diced
- 1 tsp kosher salt
- 1 tsp pepper
- 1 Tbsp Dijon mustard
- 1/4 cup brown sugar
- 1 (14.5 oz) can petite diced tomatoes
- 1 (15 oz) can kidney beans, rinsed and drained
- 3 pieces of raw bacon
- For serving: Barbecue Fritos, shredded cheddar and sour cream
Instructions
Instant Pot Instructions (using the slow cooker setting):
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown 5 minutes. Drain off excess grease. Turn off Instant Pot.
- Stir in the salt, pepper, Dijon, brown sugar, tomatoes and beans. Place the strips of bacon on top.
- Cover Instant Pot. Set the Instant Pot to the SLOW COOK function on “normal” setting for 3 hours.
- When time is up, remove the bacon and discard.
- Stir and serve topped with Fritos, cheese and sour cream.
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown 5 minutes. Drain off excess grease. Transfer to slow cooker.
- Stir in the salt, pepper, Dijon, brown sugar, tomatoes and beans. Place the strips of bacon on top.
- Cover and cook on low for 3 hours.
- When time is up, remove the bacon and discard.
- Stir and serve topped with Fritos, cheese and sour cream.
