Description

Instant Pot or slow cooker ground beef with beans and flavored with bacon and finally topped off with barbecue Fritos and sour cream. A flavorful, easy, protein-filled supper.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 1 tsp kosher salt
  • 1 tsp pepper
  • 1 Tbsp Dijon mustard
  • 1/4 cup brown sugar
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 3 pieces of raw bacon
  • For serving: Barbecue Fritos, shredded cheddar and sour cream

Instructions

Instant Pot Instructions (using the slow cooker setting):

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown 5 minutes. Drain off excess grease. Turn off Instant Pot.
  2. Stir in the salt, pepper, Dijon, brown sugar, tomatoes and beans. Place the strips of bacon on top. 
  3. Cover Instant Pot. Set the Instant Pot to the SLOW COOK function on “normal” setting for 3 hours. 
  4. When time is up, remove the bacon and discard. 
  5. Stir and serve topped with Fritos, cheese and sour cream. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown 5 minutes. Drain off excess grease. Transfer to slow cooker.
  2. Stir in the salt, pepper, Dijon, brown sugar, tomatoes and beans. Place the strips of bacon on top. 
  3. Cover and cook on low for 3 hours. 
  4. When time is up, remove the bacon and discard. 
  5. Stir and serve topped with Fritos, cheese and sour cream.
