Instant Pot Old Faithful is a one-dish meal with flavorful seasoned rice, diced green peppers, cheese and browned pork chops.

Old Faithful Instant Pot Recipe
You’re probably wondering why this recipe is called Old Faithful! This recipe is an adaptation from food.com and the original author wrote, “This is an old, faithful recipe from my mom and her mom and yes ‘old faithful’ is what they actually called it. It’s a very easy, flexible, one-dish meal.” I love that idea of having an old faithful recipe or two up your sleeve for nights when you can’t think of what to make.
This recipe starts with seasoning and then browning some pork chops in the Instant Pot using the saute setting. Then the chops are finished off as they cook on top of a bed of “unstuffed pepper” rice. We loved stirring in a bit of cheese with ours. But that is optional if you’re needing to eat dairy free. Our pork chops were thick and large so I cooked 3 total and then sliced them up and stirred them into the rice.
If you’d rather eat chicken I suggest using chicken tenderloins or slicing chicken breasts in half horizontally so they’ll cook at the same rate as the rice.
I love using converted rice because it doesn’t clump together like normal long grain white rice. You can find converted rice (also called parboiled rice) at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices. If you’d rather you can also use long grain white rice with the same liquid ratio and cooking time.

The Basic Steps
In a small bowl stir together the onion powder, garlic powder, kosher salt, pepper and Italian seasoning. Season the pork chops liberally on both sides with the seasoning blend (you’ll have a little leftover).

Turn Instant Pot to saute setting. When display says HOT add in the oil. Add in the pork chops. Brown on each side for 2 minutes. Move the chops out of the pot.

Pour in the vegetable juice and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice. Add in the rest of the seasoning blend, Worcestershire sauce and green pepper.

Place pork chops on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes then move valve to venting.

Stir the rice. Sprinkle the cheese on top. Serve rice with a pork chop on top. Or you can slice the pork chops across the grain into bite size pieces and stir them into the rice.

Notes/Tips
- Serve with extra vegetables or a side salad.
- If you’d like you can double the rice portion of this dish (double the rice and the vegetable juice). Personally I am a carbs type of person so I prefer more rice and less meat.
- This recipe can be gluten free if you use gluten free Worcestershire sauce.
- This recipe can be dairy free if you leave out the cheese.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. If you use a 3 quart pot you’ll need to brown the pork chops in batches.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients

I didn’t get the “burn” message, however the IP never sealed because the float button never came up. I’m thinking that there needs to be more liquid in this recipe. I did use converted rice (Ben’s). I ended up cooking this twice, the second time for 2 minutes instead of 4.

Couldn’t get this made in the IP as I got the “burn” notification as it was coming to pressure. I opened the pot added more liquid, scrapped the bottom of the pot and restarted it. Got the burn notice a second time. Took everything out and finished it on the stove, but, of course, the pork chops weren’t as tender as they would have been. Very good flavor–I followed all the directions, but didn’t work for me.
This is only the second recipe from the site that has been a problem. I’ve made hundreds of your recipes without an issue.
