Oh Boy Casserole

Today’s recipe is a fast and easy beef and noodle dish. It combines the rich beefy vibe of classic stroganoff with the ease of a one-pot pasta. It’s perfect for weeknights when you want something delicious but don’t have much time to spare (only a 4 minute pressure cook time and everything is made in one pot). You can easily add veggies like mushrooms, peas, or spinach to boost the nutrition. Enjoy!

Recipe adapted from the Pioneer Woman’s beef noodle skillet on her “Oh Boy” episode.

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7
  • Onion
  • Garlic powder
  • Kosher salt
  • Black pepper
  • Smoked paprika
  • Beef broth–or water and Better than Bouillon beef base
  • Tomato paste
  • Spicy brown mustard
  • Worcestershire sauce
  • Rotini noodles–or penne or another short cut pasta
  • Sour cream
  • Chives–optional

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and onion. Brown for 5 minutes. Stir in the garlic powder, salt, pepper and smoked paprika. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add in the tomato paste, mustard, Worcestershire, and rotini noodles. Don’t stir. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir in the sour cream. Top with chives, if desired. Serve and enjoy!

Notes/Tips

  • Serve with roasted green beans.
  • Try adding 4 ounces of sliced mushrooms in when you add in the onions.
  • You can use Banza chickpea pasta instead of regular pasta. Add in an extra ¼ cup of broth, keep cooking time the same.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 2 cups beef broth
