Description

Ground beef and noodles with sour cream made fast in the Instant Pot.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 2 cups beef broth
  • 2 Tbsp tomato paste
  • 1 Tbsp spicy brown mustard
  • 1/2 tsp Worcestershire sauce
  • 8 ounces rotini noodles
  • 1/3 cup sour cream
  • Chives, for topping (optional)

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and onion. Brown for 5 minutes. Stir in the garlic powder, salt, pepper and smoked paprika. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add in the tomato paste, mustard, Worcestershire, and rotini noodles. Don’t stir. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the sour cream. Top with chives, if desired. Serve and enjoy!
