Description

Everything bagel breakfast casserole with eggs, cream cheese, tomatoes, bacon and more. 


Ingredients

Scale
  • 1 day old everything bagel, cut into bite size pieces
  • 1/4 cup diced tame pickled jalapenos
  • 1/2 cup halved grape or cherry tomatoes
  • 2 pieces of bacon, fried and crumbled
  • 3 eggs
  • 1/2 cup whole milk
  • 1/2 cup shredded colby monterey jack blend cheese
  • 1/8 tsp ground mustard
  • 1/8 tsp garlic salt
  • 1/8 tsp black pepper
  • 1 ounce cream cheese
  • Pinch of everything bagel seasoning

Instructions

  1. Heat oven to 375 degrees F. Spray a 1 ½ quart baking dish with non stick cooking spray. 
  2. Add the bagel pieces, jalapenos, tomatoes and bacon to the dish and toss.
  3. In a small bowl whisk together the eggs, milk, cheese, mustard, garlic salt and pepper. 
  4. Pour egg mixture over the top of the bagel pieces. Press to submerge.
  5. Cut the cream cheese into tiny pieces and drop evenly over the top of the casserole. Sprinkle a pinch of bagel seasoning over the top. 
  6. Bake for 40-50 minutes, or until center is set and edges of golden brown. Slice and serve. 

Notes

Double this recipe to serve 6-8 people and bake in a 9×9 inch baking dish.
