Description
Everything bagel breakfast casserole with eggs, cream cheese, tomatoes, bacon and more.

- 1 day old everything bagel, cut into bite size pieces
- 1/4 cup diced tame pickled jalapenos
- 1/2 cup halved grape or cherry tomatoes
- 2 pieces of bacon, fried and crumbled
- 3 eggs
- 1/2 cup whole milk
- 1/2 cup shredded colby monterey jack blend cheese
- 1/8 tsp ground mustard
- 1/8 tsp garlic salt
- 1/8 tsp black pepper
- 1 ounce cream cheese
- Pinch of everything bagel seasoning
Instructions
- Heat oven to 375 degrees F. Spray a 1 ½ quart baking dish with non stick cooking spray.
- Add the bagel pieces, jalapenos, tomatoes and bacon to the dish and toss.
- In a small bowl whisk together the eggs, milk, cheese, mustard, garlic salt and pepper.
- Pour egg mixture over the top of the bagel pieces. Press to submerge.
- Cut the cream cheese into tiny pieces and drop evenly over the top of the casserole. Sprinkle a pinch of bagel seasoning over the top.
- Bake for 40-50 minutes, or until center is set and edges of golden brown. Slice and serve.
Notes
Double this recipe to serve 6-8 people and bake in a 9×9 inch baking dish.
