Mrs. King’s Casserole–one-pot meat and potatoes dinner made in the Instant Pot or slow cooker with seasoned ground beef, sliced potatoes and a savory sauce topped with melted cheddar.

Mrs. King’s Casserole
This recipe is adapted from Mrs. King’s Budget Hamburger Casserole on Amish 365. The author states, “Meals like Mrs. King’s Budget Hamburger Casserole are a mainstay in Amish kitchens. Why? Because they are hearty, versatile ‘pile meals’. There are many variations of hamburger casseroles and this is one that is your basic casserole.” I’ve adapted this recipe to make it in the Instant Pot or slow cooker. It was a yummy fast Sunday dinner for Greg and me.
Ingredients/Substitution Ideas
- Lean ground beef–or lean ground turkey
- Onion–or a shallot
- Celery–optional
- Kosher salt
- Black pepper
- Garlic powder
- Worcestershire sauce
- Beef broth or chicken broth–or Better than Bouillon and water
- Russet potatoes–or red potatoes
- Tomato sauce
- Dijon mustard
- Green pepper–optional
- Cheddar cheese–or colby
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion and celery, if using. Brown for about 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and Worcestershire sauce.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Scatter the potatoes into the pot. Try not to stack them directly on top of each other.

Pour the tomato sauce and dijon over the potatoes. Dump in green peppers, if using.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. Stir.

Sprinkle the cheese on top and let it melt.

Serve and enjoy!

Notes/Tips
- Serve with steamed green beans or buttered peas and corn.
- This recipe can be gluten free if you use gluten-free Worcestershire sauce.
- This recipe can be dairy free if you forego using cheese.
- Try adding some diced green onions on top of each portion.
- Stir in a handful of frozen peas or spinach at the end for added veggies.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients
- 16 ounces lean ground beef
- 3/4 cup diced onion
- 1/2 cup diced celery (optional)
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp Worcestershire sauce
- 1/2 cup beef broth or chicken broth
- 16 ounces Russet potatoes, peeled and sliced into quarter inch rounds
- 1 (8 ounce) can of tomato sauce
- 1 Tbsp dijon mustard
- 1/2 cup diced green pepper (optional)
- 1/2 cup shredded cheddar cheese
Instructions

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion and celery, if using. Brown for about 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and Worcestershire sauce. Transfer to the slow cooker.
- Stir in the broth, potatoes, tomato sauce, dijon and green peppers, if using.
- Cover and cook on high for 2-3 hours, or until potatoes are tender.
- Sprinkle the cheese on top and let it melt. Serve and enjoy!
