Description

One-pot meat and potatoes dinner made in the Instant Pot or slow cooker with seasoned ground beef, sliced potatoes and a savory sauce topped with melted cheddar.


Ingredients

Scale
  • 16 ounces lean ground beef
  • 3/4 cup diced onion
  • 1/2 cup diced celery (optional)
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce
  • 1/2 cup beef broth or chicken broth
  • 16 ounces Russet potatoes, peeled and sliced into quarter inch rounds
  • 1 (8 ounce) can of tomato sauce
  • 1 Tbsp dijon mustard
  • 1/2 cup diced green pepper (optional)
  • 1/2 cup shredded cheddar cheese

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion and celery, if using. Brown for about 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and Worcestershire sauce. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Scatter the potatoes into the pot. Try not to stack them directly on top of each other. Pour the tomato sauce and dijon over the potatoes. Dump in green peppers, if using. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. Stir.
  5. Sprinkle the cheese on top and let it melt. Serve and enjoy!

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion and celery, if using. Brown for about 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and Worcestershire sauce. Transfer to the slow cooker.
  2. Stir in the broth, potatoes, tomato sauce, dijon and green peppers, if using. 
  3. Cover and cook on high for 2-3 hours, or until potatoes are tender.
  4. Sprinkle the cheese on top and let it melt. Serve and enjoy!
