Mountain Music Casserole

When I saw a recipe called Alabama spaghetti it reminded me of Greg’s favorite band Alabama and one of his favorite songs that they sing Mountain Music…hence mountain music casserole. This dish will bring music to your soul because it’s just so yummy. You’ll only need a handful of ingredients and a few minutes in your Instant Pot to make this delicious pasta recipe. Make sure to use a high quality pasta sauce that you love!

Ingredients/Substitution Ideas

  • Italian sausage–I used mild
  • Mushrooms
  • Dried onion
  • Beef or chicken broth–I like using Better than Bouillon and water
  • Spaghetti
  • Pasta sauce–I used Mezzetta roasted garlic pasta sauce
  • Whole milk mozzarella cheese–you can also use another type of cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the mushrooms and the onion and cook for about 5 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Break the spaghetti in half and lay it in a criss cross pattern in the pot. Evenly dump the pasta sauce over the top of the spaghetti.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in half of the cheese. Sprinkle the remaining cheese on top and let it melt. 

Serve and enjoy!

Notes/Tips

  • Serve with a green salad and garlic bread.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. Halve the recipe in a 3 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with mozzarella cheese are Not Guilty Casserole and caprese chicken.
  • This recipe can be dairy-free if you leave out the mozzarella cheese.
  • You can also use another type of pasta like cavatappi, rotini or penne.
  • I like using Mezzetta brand pasta sauce. The roasted garlic sauce is yummy.

Description

Italian sausage with spaghetti, mushrooms, roasted garlic sauce and mozzarella cheese.


Ingredients

Scale
  • 1/2 pound Italian sausage
  • 1 cup sliced mushrooms
  • 1 Tbsp dried onion
  • 2 cups beef or chicken broth
  • 8 ounces spaghetti
  • 1 (25 oz) jar pasta sauce (I used Mezzetta roasted garlic sauce)
  • 1 cup shredded whole milk mozzarella cheese

    Another winner! This dish definitely brought “music to my soul” because it was delicious, EZ to throw together & on the table in around 30 min!! Am taking leftovers up the road to the in-laws today. Tell Greg we are major Alabama fans as well. We live on the coast in the FL panhandle (yes, we are watching a hurricane right now) where we’ve been dubbed “lower Alabama” all my life, so I’m loving the name he gave this dish.     Hi Karen, thank you for all the wonderful recipes. I have a question about cooking Gluten Free Spaghetti. Can it be cooked in the Instant Pot and for how long. My husband eats gluten free on most of his foods. But I have not seen a recipe for cooking GF Spaghetti. Could you plesase tell me if you have done this and if so, how long to cook it. Thanks, Linda
    P.S. how long would I cook any other type of pasta, if you know.

      I am not familiar with gluten free in the IP. From what I’ve heard is that it gets gluey. I would try it on the stove if I were you.
