Description

An easy and delicious recipe to use up leftover turkey! Bowtie pasta and turkey are enveloped in a creamy sauce. Make it in minutes in your Instant Pot.


Ingredients

Scale
  • 1 Tbsp butter
  • 1/2 cup diced onion
  • 2 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1/2 tsp kosher salt
  • 1/2 tsp poultry seasoning
  • 5 oz farfalle pasta
  • 1/2 cup diced green bell pepper
  • 2 cups diced leftover turkey (or chicken)
  • 1 can of sliced mushrooms, drained
  • 1/2 cup sour cream
  • 2 Tbsp pimentos
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the butter and let it melt. Add in the onion and sauté for 3-4 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add in the garlic powder, pepper, salt poultry seasoning, farfalle, green bell pepper, turkey and mushrooms.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the sour cream, pimentos and cheese. 
  6. Serve and enjoy!
