Mario Brothers Casserole

Today’s recipe is a mushroom linguine pasta that can be made in just a few minutes with the help of your Instant Pot. The inspiration comes from a scene in the Super Mario Bros movie where the family is eating mushroom pasta. So get ready to savor a taste of the Mushroom Kingdom with its creamy sauce, savory mushrooms, and flavorful ingredients. This recipe was adapted from The Starving Chef.

Ingredients/Substitution Ideas

  • Olive oil
  • Onion–yellow or white
  • Mushrooms–white or baby bella
  • Garlic–or 1 tsp garlic powder
  • Red pepper flakes
  • Better than Bouillon chicken base–or veggie base
  • White wine vinegar–or red wine vinegar
  • Kosher salt
  • Black pepper
  • Linguine–or fettuccine, spaghetti (use only a 3 minute pressure cook time for spaghetti)
  • Cornstarch
  • Heavy cream
  • Spinach–or 2 cups cooked broccoli
  • Parmesan cheese–or gruyere

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onion and mushroom. Saute for 4 minutes. Add in the garlic and saute for 30 seconds. 

Pour in water and scrape bottom of pot so that nothing is sticking. Turn off pot.

Stir in red pepper, chicken base, vinegar, salt and pepper. Break the pasta in half and lay it in the pot in a criss cross pattern. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting and remove the lid.

Stir in the cream and spinach. If sauce needs to thicken up then make a cornstarch slurry by stirring 1 Tbsp cornstarch with 1 Tbsp cold water and turning pot to saute setting. Stir the slurry into the pot to thicken. 

Turn off Instant Pot. Stir in the parmesan cheese. Salt and pepper to taste. Serve and enjoy!

Notes/Tips

  • Serve with garlic bread and steamed broccoli.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • If you use another type of pasta you may need to adjust the cooking time. Here is the formula: look at the back of the box of pasta and see how many minutes it says to boil the pasta. If it’s 10 minutes you divide that number by 2 (=5) and then subtract 2 minutes. So you would pressure cook for 3 minutes. I usually use a 5-10 minute natural pressure release for pasta.
  • Try adding in chicken tenderloins or bite size pieces of chicken thighs into the pot with the pasta if you’d like to add some meat to the meal.

Description

Ingredients

  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 8 ounces sliced mushrooms
  • 1 Tbsp minced garlic
  • 2 1/2 cups water
  • Pinch of red pepper flakes
  • 1 Tbsp Better than Bouillon chicken base
  • 1 Tbsp white wine vinegar
  • 3/4 tsp Kosher salt
  • 1/2 tsp black pepper
  • 8 ounces uncooked linguine
  • 1 Tbsp cornstarch (if needed)
  • 1/2 cup heavy cream
  • 1 cup spinach
  • 1/2 cup shredded parmesan cheese

    awesome dish. sauce was rich and creamy. I did use cornstarch. also I did add leftover rotisserie chicken. highly recommend

    What a dumb name! This should be called “Super Mario Bros. Casserole”! Made with home-made sourdough noodles and Parmesan Regianno cheese, this is SUPER!

    This sounds delicious as I often look for vegetarian recipes and I love using mushrooms. My question is whether I could substitute yogurt for the heavy cream since I try not to use heavy cream in my cooking. Thanks for all you do for us.

      Nevermind, it was time to start cooking dinner so I just DID IT! Worked perfectly with the information you had in the recipe. I just added the raw chicken in after the deglazing, then the pasta & cooked it like you said. Was amazing! Hubby has to have meat in EVERYthing so he was happy! Very delicious & EZ to make. I’m pretty sure we’ll be fighting over the leftovers…..again!

        That was a very wild guess but I remembered some of your recipes with those bite-sized pieces were only cooked 5 min. Figured it would work or I could cook some more. Thanks so much for all these recipes.
