Lucy Burdette’s Casserole
This recipe is adapted from Lucy Burdette’s Back to School Hot Dog Casserole. The author states that this dinner came about when her and her husband got married. She was a new step mom and everyone was stressed. She said the kids weren’t interested in fancy foods but they’d eat this one. “My stepchildren will always remember me for my hot dog casserole. Sigh.” I swapped out the hot dogs and used beef smoked sausage instead. You can use kielbasa, hot dogs, andouille sausage or whatever you like best. This one’s just so easy. You can have dinner on the table in no time. Plus, the beans sneak in a little extra fiber, which makes me feel better about serving it. The beans get almost creamy 😋
Ingredients/Substitution Ideas
- Olive oil–or canola, vegetable
- Beef smoked sausage–or hot dogs
- White cannelini beans–or navy beans, great northern beans, pinto beans
- Dijon mustard
- Worcestershire sauce
- Barbecue sauce–I used Sweet Baby Rays
Steps
Heat a medium pan over medium heat. Add in the oil and swirl around. Add in the smoked sausage and brown on each side for 3 minutes.

Stir in the beans, dijon, worcestershire and barbecue sauce.

Heat through. Turn off heat. Serve and enjoy!

Notes/Tips
- Serve with a hunk of cornbread and some sauteed spinach.
- This recipe can be gluten free if you use gluten free worcestershire and barbecue sauce.
- I was only serving my husband and I so I cut this recipe in half.
- If you want more kick, add a pinch of cayenne or red pepper flakes.
- Try adding in a diced green bell pepper or a half cup of chopped onion when you brown the sausage.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 2 tsp olive oil
- 1 (12 oz) package beef smoked sausage, sliced
- 2 (15 oz) cans white cannelini beans, rinsed and drained
- 2 Tbsp Dijon mustard
- 2 tsp Worcestershire sauce
- 1/2 cup barbecue sauce
Instructions
Stove top instructions:
- Heat a medium pan over medium heat. Add in the oil and swirl around. Add in the smoked sausage and brown on each side for 3 minutes.
- Stir in the beans, dijon, worcestershire and barbecue sauce.
- Heat through. Turn off heat.
- Serve and enjoy!
Slow Cooker Instructions:
- Add sausage, beans, dijon, worcestershire, barbecue sauce and a half cup of water or broth into the slow cooker. Stir.
- Cover and cook on low for 2 hours.
- Stir, serve and enjoy!
