Laura’s Casserole–the easiest chicken and stuffing recipe made in your Crockpot.

Laura’s Casserole
I put this easy chicken and stuffing dinner together in about five or six minutes right before I left for church. It only has 5 main ingredients and it is a dump and go recipe. It cooks in your Crockpot for a few hours and then it’s ready to go! If you’re a fan of boxed stuffing (Greg and I both are!) you’ll enjoy this dish.
Ingredients/Substitution Ideas
- Cooked, chopped chicken–or 20 ounces raw chicken breasts or thighs, sliced in half thickness wise or chicken tenderloins
- Stovetop chicken stuffing–or turkey stuffing, cornbread stuffing, etc.
- Water–or chicken broth
- Campbell’s cream of chicken with herbs–or cream of mushroom
- Sour cream
- Milk
Steps
Place chicken evenly on the bottom of the slow cooker. Sprinkle lightly with some salt and pepper.
Sprinkle the stuffing over the top of the chicken. Pour the water over the top of the stuffing.
In a bowl whisk together the cream of chicken, sour cream and milk. Spoon over the top of the stuffing.

Cover slow cooker and cook on low for 3 hours.

Serve and enjoy.

Notes/Tips
- Serve with a green salad or some steamed broccoli.
- I used my 6 quart Ninja slow cooker but this can also fit in a 3 quart slow cooker.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- Other recipes you can make with sour cream are Polish Meatballs and Sour Cream Chicken Tacos.
- Recipe adapted from Cookpad.
