Kid Casserole–a creamy, cheesy Instant Pot macaroni with smoked sausage dinner that is super fast and easy to make.

Kid Casserole
Did your mom used to make mac and cheese with hot dogs cut up in it? Mine did and I loved it! Haha! This recipe is giving me those types of vibes. Kids love it because it’s creamy, cheesy, and not too spicy, with familiar flavors that feel like mac and cheese with a tasty twist. Skyler downed this so quickly! It was a winner at my house.
Ingredients/Substitution Ideas
- Olive oil
- Smoked sausage–I used beef smoked sausage
- Chicken broth–or water and Better than Bouillon chicken base
- Macaroni–or another short cut pasta like penne
- Onion powder
- Garlic powder
- Paprika
- Black pepper
- Campbell’s broccoli cheese soup–or cheddar cheese soup
- Evaporated milk–or cream, half and half
Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and brown for 2-3 minutes on each side.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the macaroni, onion powder, garlic powder, paprika and pepper.

Dump the soup over the top. Don’t stir.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the evaporated milk.


Serve and enjoy!

Notes/Tips
- Serve with steamed broccoli.
- For extra nutrition, stir in cooked broccoli or peas at the end.
- This recipe is easy to cut in half. Halve all ingredients and keep cooking time the same.
- I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 2 1/2 cups chicken broth
- 8 oz macaroni
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp black pepper
- 2 (10.5 oz) cans Campbell’s broccoli cheese soup
- 1/2 cup evaporated milk
