Instant Pot Kentucky Wildcat Chicken

Kentucky Wildcat Chicken

With only 8 ingredients at a 4 minute pressure cooking time you can have delicious chicken tonight for dinner! You’re going to love this dump and go recipe. It has lots of flavor from the spicy brown mustard, teriyaki sauce, pepper and vinegar. Skyler and I both loved it! I’m sad for Greg because he was out of town.

This recipe is adapted from a grilling recipe called Kentucky Wildcat Chicken on Food.com.

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Boneless skinless chicken thighs–you can also use chicken tenderloins
  • Honey
  • Spicy brown mustard–or yellow, dijon
  • Black pepper–I like coarse black pepper
  • Red wine vinegar–or white wine vinegar, rice vinegar
  • Teriyaki sauce
  • Cornstarch

Pour broth into Instant Pot. Add in the chicken evenly. (My chicken was frozen. Sometimes I buy fresh chicken and then cut it into cubes, freeze it on a cookie sheet lined with parchment, then place the chicken in a ziplock bag. It comes in handy for many recipes.)

Dump in the honey, mustard, pepper, vinegar and teriyaki sauce. Don’t stir. (Don’t stir because you don’t want the sugary sauce touching the bottom of the pot and causing the burn error message).

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. (The natural pressure release will help keep the chicken tender).

In a small bowl stir together 2 Tbsp of cornstarch with 2 Tbsp cold water. Stir until smooth. Turn Instant Pot to saute setting. Stir the slurry into the Instant Pot and let the sauce thicken. Turn off Instant Pot. (You don’t need to do this step but, personally, I like the thicker sauce).

Serve and enjoy! (This chicken tastes great with rice).

Notes/Tips

  • Serve with rice and roasted or steamed broccoli.
  • This recipe can be gluten free if you use gluten-free teriyaki sauce.
  • Try doubling this recipe! It’s so tasty!
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 1/2 cup chicken broth
  • 12–16 oz boneless skinless chicken thighs, trimmed of fat and cut into 1 inch cubes
  • 1 tsp honey
  • 1 tsp spicy brown mustard
  • 1 tsp black pepper
  • 1 tsp red wine vinegar
  • 1/4 cup teriyaki sauce
  • 2 Tbsp cornstarch

Instructions

Instant Pot Instructions:

  1. Pour broth into Instant Pot. Add in the chicken evenly.
  2. Dump in the honey, mustard, pepper, vinegar and teriyaki sauce. Don’t stir.
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Slow Cooker Instructions:

  1. Add broth, chicken, honey, mustard, pepper, vinegar and teriyaki sauce into slow cooker. 
  2. In a small bowl stir together 2 Tbsp of cornstarch with 2 Tbsp cold water. Stir until smooth. Stir the mixture into the slow cooker.
  3. Cover slow cooker and cook on low for 2-3 hours.
  4. Serve and enjoy!

    Hi Karen, only giving three stars as have not made it yet.

    Just have a question about the slow cooker part. I will need to at least double this recipe but would I need to increase the amount of cornstarch and water??

    I made this in my Crock pot but totally forgot about the broth. it was completely done in 2 hours and I’m not sure what I would have done with all that extra juice. Even thickened, and no broth, there was plenty of juice or liquid to eat this over brown rice.

    I made this Tuesday night and my wife and son loved it (so did I). I doubled the recipe so we could have leftovers. I was overnight Wednesday for work, and on my way home Thursday, my plan was to dig in to the leftovers when I got home. You guessed it. Gone! I’m making Mom’s Pot Roast tonight and Sunday’s dinner is going to be the Kentucky Wildcat chicken again (by request)!
