Description
An easy and flavorful Instant Pot dish with tender chicken, creamy arborio rice and a punch of salsa verde and spices, all topped with melty cheddar cheese.
Ingredients
Scale
- 1 Tbsp olive oil
- 3/4 cup diced onion
- 1 cup chicken broth
- 1/2 cup arborio rice
- 2 cups cooked chopped chicken or turkey (I used rotisserie)
- 1/2 cup salsa verde
- 2 tsp chili powder
- 1 tsp cumin
- 1/8 tsp smoked paprika
- 1 tsp garlic powder
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 cup sour cream
- 1/2 cup shredded cheddar cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onions and saute until soft, about 4 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice. Dump in the chicken/turkey, salsa verde, chili powder, cumin, smoked paprika, garlic powder, salt and pepper.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move the valve to venting. Remove the lid.
- Stir in the sour cream. Sprinkle on the cheese and let it melt. Serve and enjoy! I topped mine with cilantro and diced tomatoes.
Notes
I made a small batch, but you can easily double this recipe. Double the ingredients and keep the cooking time the same.
