Description

An easy and flavorful Instant Pot dish with tender chicken, creamy arborio rice and a punch of salsa verde and spices, all topped with melty cheddar cheese.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 3/4 cup diced onion
  • 1 cup chicken broth
  • 1/2 cup arborio rice
  • 2 cups cooked chopped chicken or turkey (I used rotisserie)
  • 1/2 cup salsa verde
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/8 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup sour cream
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onions and saute until soft, about 4 minutes.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice. Dump in the chicken/turkey, salsa verde, chili powder, cumin, smoked paprika, garlic powder, salt and pepper. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move the valve to venting. Remove the lid.
  5. Stir in the sour cream. Sprinkle on the cheese and let it melt. Serve and enjoy! I topped mine with cilantro and diced tomatoes.

Notes

I made a small batch, but you can easily double this recipe. Double the ingredients and keep the cooking time the same.
