I was amused at first that you chose caribou stew for your Canadian recipe because I’ve never seen caribou meat anywhere but in remote communities from local hunters, but actually, I looked it up and they are incredibly widespread, so it should be relatively easy to find. You have me curious to try it now if I ever run across it!
Corned beef and cabbage is an American dish, not an Irish dish, bacon and cabbage, or colecannon are Irish dishes. But it is delicious!
