Instant Pot No Fuss Chicken

Instant Pot No Fuss Chicken

This is a simple meal with just a handful of ingredients but it is so homey and delicious! You’re going to love the savory gravy. I ladled a generous amount over the chicken, potatoes and carrots and enjoyed every bite.

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon
  • Onion
  • Bone-in chicken breasts–skin removed
  • Garlic salt
  • Pepper
  • Campbell’s French Onion Soup
  • Red potatoes–or another type of potato
  • Baby carrots–or peeled carrots cut into large chunks
  • Cornstarch

The Basic Steps

  1. Add chicken broth, onion, chicken, garlic salt, pepper and French onion soup into the pot.
  2. Place a tall trivet* into the pot. Place a pot-in-pot dish* on top of the trivet. Add the potatoes and carrots into the dish. 

  3. Pressure cook.
  4. Thicken the gravy.
  5. Remove chicken off the bone and stir into the gravy.
  6. Serve the chicken and gravy with the carrots and potatoes. 

Notes/Tips

  • Can I use another cut of chicken? I liked using bone-in chicken breasts (sometimes labeled split chicken breasts) for this recipe because they stay moist and tender and are a healthier white meat. You can also use boneless skinless chicken thighs instead (I would use 2 pounds and trim off the excess fat). If you use boneless skinless chicken breasts they won’t be as tender but they will still work.
  • Why use the pot-in-pot method for the carrots and potatoes? I like keeping the potatoes and carrots separate from the chicken because they don’t get too mushy and overcooked.
  • Can I make this without the carrots and potatoes? Yes. Just leave them out and keep the rest of the recipe the same.
  • This recipe can be gluten free if you use a gluten free french onion soup.
  • We served this as a one pot meal but you can add some cornbread and roasted brussels sprouts to the dinner table if you’d like.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Chicken, carrots and potatoes in a savory gravy. An easy one pot dump and go meal!


Ingredients

Scale
  • 1 cup chicken broth
  • 1 onion, thinly sliced
  • 2 bone-in chicken breasts, skin removed
  • Garlic salt
  • Pepper
  • 1 (10.5 oz) can Campbells French Onion Soup
  • 1 pound red potatoes, quartered
  • 2 cups baby carrots
  • 2 Tbsp cornstarch

Instructions

  1. Add chicken broth and onion into the Instant Pot. Place the chicken into the pot and sprinkle with garlic salt and pepper. Pour the soup over the top of the chicken.
  2. Place a tall trivet* into the pot. Place a pot-in-pot dish* on top of the trivet. Add the potatoes and carrots into the dish. 
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes for fresh chicken or 12 minutes for frozen chicken. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  4. Remove the pan with the potatoes and carrots and set aside. Use tongs to place the chicken on a cutting board.
  5. In a small bowl stir together cornstarch and 3 Tbsp of water until smooth. Turn Instant Pot to saute setting. Stir the cornstarch mixture into the juices in the Instant Pot. It will thicken quickly into a gravy. Turn off the pot. 
  6. Use a fork and a knife to remove the chicken off of the bone. Stir the chicken into the pot. Serve the chicken and gravy with the carrots and potatoes.

    I was wondering if you could add a photo of your recipes in your emails? Lots of times I just delete and not open it the email if the title doesn’t peak my interest. I know it is only less than a minute to open look and decide if I am interested but when you get 200 plus emails a day sometimes it doesn’t seem worth the effort. Thanks for listening.

      Some of the recipes have a crockpot version and some do not. Unfortunately not every recipe works well in the crockpot.

    the recipe asks for thinly sliced onions. but in the directions it does not say anything on what to do with the onions.

    I made this recipe last night for the first time and it was wonderful! So tasty, and the gravy hit the spot! It’s just the two of us so we have leftovers for another meal – looking forward to having them.

    Karen, I wonder if there is another vegetable that could be used in this recipe? I think this recipe is one I would make often and may want to change out the carrots for something else now and then.

    Thank you. Because of your recipes, I use my Instant Pot much more than I ever thought I would!

      another root vegetable like parsnips would work…Another vegetable that isn’t as hearty could be stirred in later like steamed broccoli

    Fabulous one pot meal! I did use boneless skinless chicken thighs and a pkg of dry onion soup mixed with 2 cups of water. I cooked in my IP as directed!

    Can I use boneless chicken breast? will it affect the cooking time?
