Instant Pot Loaded Frito Taco Soup
I stumbled upon this dump and go method of taco soup when we were on fall break last week. I planned to make taco soup but I didn’t have time to brown the ground beef. Since it was extra lean ground beef I threw it in the pot raw. Surprisingly it turned out absolutely delicious. Greg loaded up my bowl with fritos, avocados and cheese and I was in heaven. He suggested I post the recipe for you all since we enjoyed it so much!
Ways you can change up this soup…
- Use ground turkey or even chicken breasts in the place of ground beef. If you do decide on chicken you may need to increase cooking time depending on if the chicken is frozen and/or thick.
- Use whatever type of beans you like. I threw in a can of black beans. Try kidney or pintos or even a can of chickpeas.
- Use frozen corn in the place of canned corn.
- Use homemade taco seasoning or store-bought. Some taco seasonings are more potent than others so use a smaller amount at first and add more to taste at the end of the pressure cooking time.
- Use beef or vegetable broth in the place of chicken broth. Use Better than Bouillon and water instead of broth.
- Use tortilla chips in the place of Fritos
- Get creative with the cheese choice…use cheddar, Monterey jack, Colby jack, pepper jack, mozzarella or a Mexican blend.

Instant Pot Loaded Frito Taco Soup

Description
A dump and go, easy and fast recipe for taco soup that’s loaded up with fritos, cheese and diced avocados.
Ingredients
- 1 pound extra lean ground beef or ground turkey
- 1–2 cups chicken broth (if you want it thicker then use 1 cup of broth)
- 1 (14.5 oz) can black beans, rinsed and drained
- 1 (14 oz) can corn, drained
- 2 (8 oz) cans tomato sauce
- 1 (14.5 oz) can petite diced tomatoes
- 3–4 Tbsp taco seasoning (depending on your taste preference)
- Salt and pepper to taste
- Fritos
- Grated Cheese
- Diced Avocados
Instructions
Instant Pot Instructions:
- Add raw ground meat to Instant Pot and break it up with a wooden spoon. Add in the chicken broth, beans, corn, tomato sauce, diced tomatoes and taco seasoning.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes. When the time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid.
- Stir well. Salt and pepper to taste. Ladle into bowls and top with fritos, cheese and avocados.
Slow Cooker Instructions:
- Add raw ground meat to slow cooker and break it up with a wooden spoon. Add in the chicken broth, beans, corn, tomato sauce, diced tomatoes and taco seasoning.
- Cover and cook on low for 6 hours or on high for 3 hours.
- Stir well. Salt and pepper to taste. Ladle into bowls and top with fritos, cheese and avocados.

How would I cook it if I don’t have a soup function on my IP?
Just use the pressure cook/manual button.
This is freaking DELICIOUS! I made it according to the recipe only added onions and did it in the 6 Qt. I like it so much I want to make a BIG BATCH to freeze dry. So I am doubling the recipe for the 8 Qt pot. Do I increase the time?

You’ll love it!
This looks really great and I’m a newbie to IP. If I wanted to saute the ground turkey or chicken first for flavor, what would you suggest as a cooking time? Or if I wanted to use frozen chicken breast and shred, that would have to cook longer. Any suggestions on the times?
I would brown the ground turkey for 5 minutes using the sauté setting on your Instant Pot. I would cook frozen chicken for 15 minutes.
My husband and I don’t like chunks of tomato in anything. Can I just omit that can of diced tomatoes, or should it be replaced with something else like crushed tomatoes or another can of tomato sauce?
I’d do a can of crushed tomatoes! will be wonderful!
