Forgotten Chicken and Rice Casserole–one of those recipes you need in your back pocket for a busy day. Throw everything into the pot and forget about it! Easy, flavorful, tender chicken with rice.

Instant Pot Forgotten Chicken

This is one of those recipes that doesn’t look all that appealing but it tastes really good! It’s called forgotten chicken because it’s a recipe that you can throw into your pot, walk away and come back whenever you are ready. It stays delicious for up to 2-3 hours on the warm setting. You can just “fuhgeddaboudit.”

Ingredients/Substitution Ideas

  • Water
  • Better Than Bouillon Chicken Base
  • Converted Rice–or long-grain white rice
  • Poultry Seasoning
  • Dried Onions
  • Kosher Salt
  • Black Pepper
  • Garlic Powder
  • Dried Parsley–or fresh parsley
  • Dijon Mustard–or stone-ground mustard
  • Sliced Mushrooms–or chopped fresh mushrooms
  • Chopped Cooked Chicken–or leftover turkey
  • Cream Cheese–or Neufchâtel cheese
  • Half and Half–or milk with a splash of cream
  • Parmesan Cheese–or Romano, for serving

Instructions

Pour water into Instant Pot. Stir in the Better than Bouillon. Sprinkle in the rice, poultry seasoning, onions, salt, pepper, garlic powder, parsley. Dump in the mustard, mushrooms, chicken and cream cheese.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
Stir in the half and half.

Scoop onto plates and top with a sprinkling of parmesan cheese.

Notes and Tips

  • This recipe makes 4 servings. You can easily double the recipe. Keep the same cooking time.
  • This recipe tastes great with rotisserie chicken.
  • I like to buy Better than Bouillon at Costco in the big jars. I use it so much in the Instant Pot. It really adds a lot of flavor to so many dishes. If you don’t have the chicken base you can try using bouillon cubes/granules. They seem to be more strong and salty so I would only use 1 or 2 cubes or teaspoons.
  • I used my 6 quart Instant Pot Duo 60 7 in 1*. You can also make this in your 3, 4 or 8 quart pot.

Ingredients

  • 1 1/2 cup water
  • 1 Tbsp Better than Bouillon Chicken Base
  • 1 cup converted rice
  • 1 tsp poultry seasoning
  • 1 Tbsp dried onions
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 2 tsp dried parsley
  • 1 tsp dijon mustard
  • 1 can sliced mushrooms, drained
  • 1 1/2 cups chopped cooked chicken
  • 2 ounces cream cheese
  • 1/2 cup half and half
  • Parmesan cheese, for serving

    I used cubed raw tenderloins in place of cooked chicken, and used evaporated milk in place of the half and half. It turned out great.

    I posted on the wrong recipe. I’d like to use my low carb rice. It’s 1 for 1. 1cup of water to 1 cup of rice. Also the cooktime is 8 mins, is that doable?

      Maybe just use 1 1/4 cups instead of 1 1/2. Should work great!

      Here’s what I’d do:

      Slow Cooker Version:
      • Add the water, Better Than Bouillon, converted rice, spices, dried onions, mustard, mushrooms, and chicken all to the slow cooker.
      • Cut the cream cheese into cubes and stir it in.
      • Cook on LOW for 2–3 hours, or until the rice is tender.
      • Stir in the half and half at the end, then let it warm through for 5–10 minutes.

      She says above in her description …”Use 1 ½ cups water and 1 cup of white rice. Pressure cook for 8 minutes with a 5-10 minute natural pressure release.”

    Hi Karen,
    Thank you for this recipe. I want to make it tonight. My question is this. I have a 10 QT Instant Pot and I always struggle with how to adjust the liquid. If I double this recipe, would I use 4 cups of liquid, or how would you suggest I adjust the liquid so the rice isn’t mushy?

      I would double the recipe straight across. So use 2 ½ cups liquid. Keep the same cooking time.

    Is it possible to use cauliflower rice instead of brown rice?

      I suspect that the cauliflower will turn to mush. It would be better to cook that on the stove, separate from the chicken.
