One of those recipes you need in your back pocket for a busy day. Throw everything into the pot and forget about it! Easy, flavorful, tender chicken with rice.

- 1 1/2 cup water
- 1 Tbsp Better than Bouillon Chicken Base
- 1 cup converted rice
- 1 tsp poultry seasoning
- 1 Tbsp dried onions
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 2 tsp dried parsley
- 1 tsp dijon mustard
- 1 can sliced mushrooms, drained
- 1 1/2 cups chopped cooked chicken
- 2 ounces cream cheese
- 1/2 cup half and half
- Parmesan cheese, for serving
Instructions
- Pour water into Instant Pot. Stir in the Better than Bouillon. Sprinkle in the rice, poultry seasoning, onions, salt, pepper, garlic powder, parsley. Dump in the mustard, mushrooms, chicken and cream cheese.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the half and half.
- Scoop onto plates and top with a sprinkling of parmesan cheese.
