Instant Pot Everything Bagel Breakfast Casserole

When I was in high school bagels were all the rage. Bagel bakeries were popping up all over the place. Low fat diets were also the craze so bagels fit right in. I loved blueberry bagels the most! I still love bagels. They are chewy and soft on the inside and browed on the outside. Toast them and slather on cream cheese for a delightful breakfast or snack.

Today’s recipe involves an everything bagel. The everything bagel has toppings that commonly include poppy seeds, sesame seeds, onion flakes, garlic flakes, pretzel salt, and pepper. These days you can find “everything bagel” seasoning at the grocery store. I found mine at Winco in the bulk section. It tastes great on chicken and avocado toast and many other foods too.

Pick up a couple of everything bagels from your grocery store. The grocery store I went to was selling them individually for 75 cents a piece. Then you’ll cut up the bagels into cubes and place them in the bottom of a deep dish for pot-in-pot cooking. You can use the 7×4 inch Fat Daddios pan* or the 3 quart IP liner* for pot-in-pot cooking. If you can’t find the everything bagel buy a bag of plain bagels and make your own everything bagels by sprinkling everything bagel seasoning into the pan with the cubed bagels.

Then you’ll pour an egg mixture over the top of the bagels along with some green onions, bell peppers and grated cheddar cheese. Pressure cook the casserole in the Instant Pot for a tasty custard-like bagel breakfast casserole. Serve it for breakfast or dinner this week!

Description

A breakfast strata with everything bagels, sausage, eggs, peppers and cheese. 


Ingredients

Scale
  • 1/2 pound ground sausage, browned and drained
  • 2 everything bagels cut into cubes
  • 1/4 cup diced green onions
  • 1 red bell pepper, cored and diced
  • 6 eggs
  • 1/2 cup half and half
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Everything Bagel Seasoning (optional)
  • 1 cup shredded cheddar cheese

Instructions

Instant Pot Instructions: 

  1. Add 1 cup water into bottom of Instant Pot.
  2. Spray a 7 inch by 4 inch cake pan with non-stick cooking spray. Add the bagel cubes, sausage, green onions and bell pepper. 
  3. In a mixing bowl whisk together eggs, half and half, salt pepper and desired amount of everything bagel seasoning. Pour the mixture over bagel cubes. 
  4. Sprinkle the cheese over the top. 
  5. Place the pan on a sling and lower the pan into the Instant Pot.
  6. Cover and pressure cook for 25 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  7. Slice and serve.

Slow Cooker Instructions: 

  1. Spray slow cooker with non-stick cooking spray. Add the bagel cubes, sausage, green onions and bell pepper. 
  2. In a mixing bowl whisk together eggs, half and half, salt pepper and desired amount of everything bagel seasoning. Pour the mixture over bagel cubes. 
  3. Sprinkle the cheese over the top. 
  4. Cover and cook on HIGH for 2-3 hours. 
  5. Slice and serve.

    I forgot to mention that we used vegan sausage:
    3 Morningstar vegan sausage patties + 6 Gardein meatballs
    Thawed and crumbled with fingers and then browned in a pan with the onions.

    This was fantastic! Loved how high this was when it finished cooking, and the bagels were completely soft but not mushy. We used 1/4 tsp of bagel spice but that was not enough. Next time will try 1/2 tsp and just allow people to add salt on top if they want more. I layered this time as the bagels then veggies, eggs mixture then topped with sausage and cheese and turned out just as delicious. Thank you!

    Made twice, the first time I made a full recipe in a glass container and it was a bit watery and I used mild Italian sausage but it overpowered everything; the 2nd time I sponge all vege with paper towels and made a 1/2 recipe using breakfast sausage in a bundt cake pan and it was perfect. My husband gave it a 4.9 stars but only because he prefers Karen other breakfast casserole: Instant Pot Bacon Egg Casserole.     I love a good savory bread pudding. I made one once with leftover garlic bread. It turned out pretty dang good. I will have to try this one.

    If you don’t have a sling can you put your cake pan on a trivet?

      You can make a sling out of foil wrap.
