Instant Pot Corndog Casserole

Wild Card Wednesday is a day where I share a recipe that my husband, Greg, chooses. It’s something unique or out of the box. His choice for today was Instant Pot corndog casserole (which I laughed at when he first told me). If you’re a fan of hot dogs, cornbread and beans you’ll be a fan of this casserole.

A few notes about the recipe and ingredients:

What kind of hot dogs? I liked using beef brats in this recipe instead of cheap, pork hot dogs which are lower quality. I picked up a package of Johnsonville beef brats. They were the same size as hot dogs and had great flavor. You can use smoked sausage or whatever type of meat you like. (Costco has really tasty all beef hot dogs.)

What are Ranch Style Beans? Ranch style beans are typically made with pinto beans in a seasoned sauce. They are similar to baked beans or “pork and beans,” but are not sweet like baked beans, and they don’t normally include bacon or pork. (If you choose to use plain pinto beans in this recipe instead of ranch style beans then you’ll want to drain and rinse them.)

Can I bake this in the oven? Yes. You can make this in a round baking dish in the oven instead of the Instant Pot. I would cook the casserole for 40-45 minutes in the oven at 350° F.

What kind of pot-in-pot dish did you use? I used a 7×3 inch Fat Daddios* cake pan. It worked perfectly. If you choose to use a corningware or glass dish you may need to increase the cooking time.

Where did you get your sling? I love my red silicone sling (which doubles as a trivet). It is the OXO brand and I ordered it on Amazon.*

Description

Beef hot dogs, ranch style beans and corn cooked with a cornbread topping. You can cook this in the Instant Pot or the oven.


Ingredients

Scale

Equipment needed: pot-in-pot dish and sling/trivet

  • 1 (12 oz) package of all beef hot dogs (I used Johnsonville Beef Brats)
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can ranch style beans
  • 2 Tbsp yellow mustard
  • 3 Tbsp BBQ sauce
  • 6 Tbsp cornmeal
  • 1/4 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg, slightly beaten
  • 1/4 cup milk
  • 1 Tbsp oil
  • 1 Tbsp sugar
  • For topping: shredded cheddar and diced green onions

Instructions

  1. Slice hot dogs into ½ inch rounds. Add hot dog pieces, corn and beans (not drained), mustard and BBQ sauce into pot-in-pot dish. I used a 7×3 inch Fat Daddios cake pan*. Stir well. Set aside.
  2. In a medium mixing bowl whisk together the cornmeal, flour, baking powder and salt. Stir in the egg, milk, oil and sugar until just combined. Spoon the mixture over the hotdog/bean mixture. Smooth the top with a butter knife. Cover the pan with foil and place it on a sling/trivet*.
  3. Pour 1 ½ cups water into bottom of Instant Pot. Lower the sling with the pan on top into bottom of Instant Pot.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 25 minutes. When time is up let pressure release naturally for about 5-10 minutes and then move valve to venting and remove the lid.
  5. Remove the pan and the foil. Scoop onto plates and serve topped with a sprinkling of cheese and diced green onions. 

Notes

You can also bake this in the oven for 40 minutes at 350° F. 

I used my 6 quart Instant Pot Duo 60 7 in 1*.

    Hi Karen,
    Love the Corn Dog Casserole.
    Recently I have been unable to find Ranch Style Beans.
    Would I be able to substitute Chili Beans Pinto. The can I am looking at reads “with chili pepper, onion & garlic in a zesty tomato sauce”?

      I would suggest cooking it in the oven at 350 for 30-40 minutes in a 9×13 inch pan

    I believe my silicon sling is like yours, with 4 1/2 inch “legs” on the center bottom and 4 in a circle further out. I think it will work OK. Thanks for responding.

    Sorry, I just read the read the recipe again and the silicone sling is OK on the bottom of the IP.

    Maybe my use of the Aroma 8 cup Rice Cooker pot (above post) will encourage others to look around their kitchen and see what pot you already have that may fit your IP.
    Also, check out thrift stores for small pots. Remember to take a measuring tape along!

    Planning to make the Corn Dog Casserole and wondered what pot-in-pot I was going to use. I thought of my
    8 cup Aroma Rice Cooker metal pot (7 1/2 wide X 4 1/4 deep.) On a sling it fits perfectly, if the sling can sit safely on the IP bottom and not on a trivet. Will the sling be oK on the bottom of the IP?

      My sling has about a half inch of space underneath it. Does your sling not? There does need to be some space underneath the sling so perhaps it won’t work?

    When I make this recipe, soon I hope, I will use my Crisp Lid to add a nice color to the top of the cornbread.

      You can do in a round baking dish or in a 8×8 inch square baking dish. I would cook uncovered.

    I just made this. Except the cornbread didn’t cook. I lowered the pan on top of the trivet? I am assuming the I should have lowered directly to the bottom of the instapot. Thanks so much. Just found your site and am excited to try more of your recipes!

      I had mine on top of the trivet sling and it cooked through well. Perhaps add 5 more minutes?
