Instant Pot Creamy Cheesy Chicken and Rice with Vegetables

This slightly spicy, creamy rice with tender bites of chicken is the ultimate easy dump-and-go meal. It comes together with just a handful of ingredients and only takes a few minutes to get started. Double the chicken if you want to boost the protein, and if you love mushrooms, they’re a great addition here too. It makes a big batch (perfect for feeding a crowd) or you can easily cut it in half for a smaller group.

Ingredients/Substitution Ideas

  • Boneless skinless chicken thighs–or chicken breasts (won’t be as tender)
  • Water
  • Zatarain’s creamy blackened chicken rice mix
  • Cream of chicken and herbs condensed soup–or 4 oz cream cheese
  • Sour cream
  • Shredded cheddar cheese–or Monterey Jack or Colby Jack
  • Frozen California blend vegetables–or any frozen mixed vegetables

Steps

Pour water into Instant Pot. Add in half of the chicken. Sprinkle in both packages of rice and seasoning. Top with remaining chicken. Scoop cream of chicken over the top. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the sour cream, cheddar and veggies.

Serve and enjoy!

Notes/Tips

  • Serve with a fruit or green salad.
  • This makes a lot! You may want to halve the recipe.
  • Try doubling the amount of vegetables. I used a bag of broccoli, cauliflower and carrots. Use whatever kind of veggie you like best. I steamed mine in the microwave before stirring them into the Instant Pot.
  • The layering method is important for avoiding a burn notice.
  • I used my 6 quart Instant Pot*. You can also make this in a 4 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. This can be frozen, but the texture of the sour cream may change slightly.

Ingredients

  • 1 (10.5 oz) can cream of chicken and herbs condensed soup
  • 1 cup sour cream
  • 1 cup shredded cheddar
  • 1 (12 oz) package frozen California blend vegetables, cooked

Instructions
