Description

A quick and comforting one-pot meal made with tender bites of chicken, bold Cajun-style rice, creamy sauce and cheesy vegetables. Make it fast in the Instant Pot!


Ingredients

Scale
  • 24 oz boneless skinless chicken thighs, cut into 1 inch pieces
  • 2 1/2 cups water
  • 2 (8 oz) packages Zatarain's creamy blacked chicken rice
  • 1 (10.5 oz) can cream of chicken and herbs condensed soup
  • 1 cup sour cream
  • 1 cup shredded cheddar
  • 1 (12 oz) package frozen California blend vegetables, cooked

Instructions

  1. Pour water into Instant Pot. Add in half of the chicken. Sprinkle in both packages of rice and seasoning. Top with remaining chicken. Scoop cream of chicken over the top. Don’t stir.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  3. Stir in the sour cream, cheddar and veggies.
  4. Serve and enjoy!
