Hubby’s Pleasure Casserole–an easy Instant Pot pasta dish with seasoned ground beef, rigatoni, and a creamy tomato sauce topped with melted mozzarella and parmesan.

Hubby’s Pleasure Casserole

The hubby is always so pleased after eating this dish! This meat-heavy rigatoni pasta dish is the perfect balance of savory and creamy. It’s got a bit of cream cheese to give the tomato sauce a bit of richness. With mozzarella and parmesan cheese on top it’s melty and irresistable. Skyler told me “mom, you should have doubled this one!!”

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Onion–or a shallot
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Italian seasoning
  • Crushed red pepper flakes
  • Beef broth–or water and Better than Bouillon
  • Rigatoni–or penne
  • Crushed tomatoes
  • Cream cheese
  • Mozzarella–whole milk mozzarella is so good
  • Parmesan cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the diced onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, italian seasoning and red pepper.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the rigatoni. Pour crushed tomatoes evenly over the pasta. Add in cream cheese.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir. Sprinkle the cheese on top and let melt (I used air fryer lid to melt the cheesy quickly).

Serve and enjoy!

Notes/Tips

  • Serve with a caesar salad or green salad.
  • Penne or ziti work well if you don’t have rigatoni.
  • You can use a pound of Italian sausage instead of beef. But you’ll want to leave out the salt, pepper, red pepper flakes if you use sausage.
  • I love using whole milk mozzarella! It tastes so good compared to low fat mozzarella 🙂
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

  • 1 1/2 cups beef broth
  • 6 oz rigatoni
  • 1 (15 oz) can crushed tomatoes
  • 2 oz cream cheese
  • 1/2 cup shredded mozzarella
  • 1/3 cup parmesan cheese
