Guilty As Charged Casserole
Today’s recipe is an easy summer dish that can be served hot or cold. It’s got one of my favorite foods included…artichokes! Yum yum! You can use your Instant Pot or you can make it on the stove top. When all the leftovers get eaten and you’re accused of eating them you’ll have to tell your family that you are “guilty as charged!”
This recipe is adapted from Recipes by Ellena. The author says, “I use almost anything in it. These ingredients are just a guideline, use whatever leftovers you have in your refrigerator, and it will be fantastic! Add in some extra veggies, that half jar of olives, leftover meat, dressings that don’t have enough left in the bottle for an actual meal. You get the idea. Just clean out your fridge and make a large pasta salad. It will never be able to be duplicated, but it will be so good! And your refrigerator will look great too!”
Ingredients/Substitution Ideas
- Rotini pasta–or fusilli, cavatappi
- Water
- Newman’s Own Balsamic Vinaigrette–or another brand you like
- Tomatoes–I used cherry tomatoes
- Quartered artichoke hearts–in water, not oil
- Fresh basil
- Kosher salt
- Black pepper
Steps
Add pasta, water and salad dressing into Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir in the tomatoes, artichokes, basil, salt and pepper.

Serve hot or cold topped with a bit of parmesan cheese.

Notes/Tips
- This can be served as a main dish or as a side dish. It can be served hot or cold. Try adding in cooked, chopped chicken to make it more of a meal.
- Try adding in other ingredients such as sliced olives, broccoli florets, peas, carrots, cubes of cheese, mini pepperonis, ham etc.
- To make this gluten free use gluten free pasta and cook it on the stove according to package directions.
- I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days.

Ingredients
- 8 ounces rotini pasta
- 2 cups water
- 1/3 cup Newman’s Own Balsamic Vinaigrette
- 1 cup diced tomatoes
- 1 (14 oz) can quartered artichoke hearts, drained and diced
- 1/4 cup chopped fresh basil
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- Parmesan cheese
Instructions
