Description
Pasta with tomatoes, basil and artichokes made in the Instant Pot or on the stove.
Ingredients

- 8 ounces rotini pasta
- 2 cups water
- 1/3 cup Newman's Own Balsamic Vinaigrette
- 1 cup diced tomatoes
- 1 (14 oz) can quartered artichoke hearts, drained and diced
- 1/4 cup chopped fresh basil
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- Parmesan cheese
Instructions
Instant Pot Instructions:
- Add pasta, water and salad dressing into Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir in the tomatoes, artichokes, basil, salt and pepper.
- Serve hot or cold topped with a bit of parmesan cheese.
Stove Instructions:
- Cook pasta according to package directions, drain and add to a big serving bowl.
- Stir in the salad dressing, tomatoes, artichokes, basil, salt and pepper.
- Serve hot or cold topped with a bit of parmesan cheese.
