Description

Pasta with tomatoes, basil and artichokes made in the Instant Pot or on the stove.


Ingredients

Scale
  • 8 ounces rotini pasta
  • 2 cups water
  • 1/3 cup Newman's Own Balsamic Vinaigrette
  • 1 cup diced tomatoes
  • 1 (14 oz) can quartered artichoke hearts, drained and diced
  • 1/4 cup chopped fresh basil
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • Parmesan cheese

Instructions

Instant Pot Instructions:

  1. Add pasta, water and salad dressing into Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  2. Stir in the tomatoes, artichokes, basil, salt and pepper.
  3. Serve hot or cold topped with a bit of parmesan cheese.

Stove Instructions:

  1. Cook pasta according to package directions, drain and add to a big serving bowl. 
  2. Stir in the salad dressing, tomatoes, artichokes, basil, salt and pepper.
  3. Serve hot or cold topped with a bit of parmesan cheese.
