Grinch Casserole–seasoned red breakfast potatoes with sausage made in your Instant Pot. Top with an over-easy egg for a yummy Christmastime breakfast.

Grinch Casserole

“Why the Grinch even took the last can of Who Hash!” If you’re fresh out of canned Who Hash then you can make your own version from scratch for Christmas. The Instant Pot speeds the recipe along as it can steam potatoes in just a couple of minutes. We loved eating this breakfast dish at dinnertime! I fried up a few eggs to go on top which just brought everything together. Enjoy and have a merry Christmas.

Ingredients/Substitution Ideas

  • Red potatoes–or peeled russet potatoes
  • Breakfast sausage–I used Jimmy Dean
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Black pepper
  • Kosher salt
  • Cayenne pepper
  • Green onions
  • Fried eggs–optional, I like mine over easy

Steps

Pour 1 ½ cups water into bottom of Instant Pot. Add potatoes into steamer basket. Place steamer basket into Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid. Set steamer basket aside and discard the water.

Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Cook completely through. If pot needs to be deglazed use a couple tablespoons of water or broth to deglaze. Turn off saute setting.

Add in the potatoes and season them with the garlic powder, onion power, paprika, pepper, salt and cayenne. Gently stir in the green onion. Top with fried eggs, if desired. Serve and enjoy!

Notes/Tips

  • Serve with fresh fruit like orange slices.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • I used my silicone steamer basket*.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

  • 2 pounds red potatoes, cut into 1/2 inch cubes
  • 1 pound breakfast sausage
  • 1/2 tsp garlic powder

  • 2 green onions, sliced
  • 2–4 fried eggs, optional
