Description

Greek Style Garlic Chicken can be made with your Instant Pot or Crockpot. The chicken is served alongside yogurt cucumber sauce, lettuce, tomato and toasted pitas. A great summer meal! 


Ingredients

Units Scale

For the chicken:

  • 1 cup chicken broth
  • 2 pounds boneless, skinless chicken thighs or 2 pounds bone-in chicken breasts (or 4 cups chopped, rotisserie chicken)
  • 2 tsp rotisserie chicken seasoning
  • 3 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 1 fresh garlic clove, minced
  • 1/2 tsp black pepper
  • 1/2 tsp kosher salt
  • 1/2 tsp paprika

For the sauce: 

  • 1 cup full fat plain Greek yogurt
  • 1 cup diced cucumber
  • 1 Tbsp dried dill
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder

Other:

  • Shredded lettuce
  • Diced tomatoes
  • Pitas, sliced into wedges (I brushed mine with olive oil, sprinkled with garlic salt and toasted them)

Instructions

Instant Pot Instructions: 

  1. Pour 1 cup broth into Instant Pot. Add in the chicken. Sprinkle chicken with rotisserie chicken seasoning. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes for fresh chicken or 15 minutes for frozen chicken. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  3. Transfer chicken to a chopping board and shred or chop (remove bones and skin if using bone-in chicken). Add chicken to a mixing bowl.
  4. Add lemon juice, olive oil, garlic, pepper and salt in with the chicken. Toss. Set chicken aside.
  5. Make the sauce by stirring the yogurt, cucumber, dill, salt, pepper and garlic powder together in a bowl. 
  6. Add individual portions of chicken, sauce, pitas, tomatoes and lettuce to bowls or plates, eat and enjoy!

Slow Cooker Instructions:

  1. Pour 1 cup broth into slow cooker. Add in the chicken. Sprinkle chicken with rotisserie chicken seasoning. 
  2. Cover and cook on low for 4-6 hours.
  3. Transfer chicken to a chopping board and shred or chop (remove bones and skin if using bone-in chicken). Add chicken to a mixing bowl.
  4. Add lemon juice, olive oil, garlic, pepper and salt in with the chicken. Toss. Set chicken aside.
  5. Make the sauce by stirring the yogurt, cucumber, dill, salt, pepper and garlic powder together in a bowl. 
  6. Add individual portions of chicken, sauce, pitas, tomatoes and lettuce to bowls or plates, eat and enjoy!
