Sneaky Mom Soup–an Instant Pot or slow cooker cheesy broccoli and cauliflower soup that hides 5 vegetables from picky kids and tastes amazing.

Sneaky Mom Soup

Sneaky Mom Soup

This is a tasty soup that sneaks in veggies for those picky kids. It’s like a broccoli cheddar soup but better since it also contains celery, onion, carrots and cauliflower. Because it’s pureed the kids won’t know that the vegetables are in it! You can add in some pasta and/or chicken to make it more of a complete meal. I’ve been enjoying it for lunch.

Ingredients/Substitution Ideas

  • Butter
  • Carrots
  • Onion–yellow, white
  • Celery
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Dried thyme leaves
  • Water
  • Better than Bouillon chicken base–you can use 3 cups of chicken broth instead of the water and bouillon
  • Frozen broccoli–or fresh broccoli florets
  • Frozen cauliflower–or fresh cauliflower florets
  • Heavy cream–or evaporated milk
  • Sharp cheddar cheese–shred off the block instead of pre-shredded cheese for better melting
  • Bacon crumbles–optional for topping

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the carrots, onion, celery, salt, pepper, garlic powder and thyme and saute for 5 minutes. 

Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Stir in the Better than Bouillon. Add in the broccoli and cauliflower.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. 

Puree contents of Instant Pot in a blender or use an immersion blender to puree.

Temper the cream by stirring some of the hot soup together with the cream. Stir tempered cream into the pot.

Stir in the cheese and let it melt. 

Ladle into bowls and serve topped with some bacon crumbles, if desired.

Instant Pot or Crockpot Sneaky Mom Soup

Notes/Tips

  • Serve with breadsticks or dinner rolls.
  • If you’d like you can stir some cooked chopped chicken into the soup.
  • If you’d like you can stir some cooked orzo into the soup.
  • This recipe is gluten free.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Other recipes you can make with thyme are Linda’s Casserole and Strong Personality Casserole.
  • I used my BlendTec Blender with Wild Side Jar* to blend this soup all in one batch. It pureed so nicely.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. I stored mine in little 1.25 cup containers* and froze them for fast and easy lunches.

Ingredients

Scale
  • 3 Tbsp butter
  • 2 large carrots, diced or shredded
  • 1 medium onion, diced or shredded
  • 2 ribs of celery, diced or shredded
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme leaves
  • 3 cups water
  • 1 Tbsp Better than Bouillon chicken base
  • 1 (12 oz) bag frozen broccoli
  • 1 (12 oz) bag frozen cauliflower
  • 1/4 cup heavy cream
  • 8 ounces shredded sharp cheddar cheese
  • Bacon crumbles, optional for topping

Instructions

Instant Pot Instructions:

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the butter and let it melt. Add in the carrots, onion, celery, salt, pepper, garlic powder and thyme and saute for 5 minutes. Transfer to the slow cooker.
  2. Stir in the water, Better than Bouillon, broccoli and cauliflower.
  3. Cover and cook on high for 3 hours or on low for 5 hours.
  4. Puree contents of slow cooker in a blender or use an immersion blender to puree.
  5. Temper the cream by stirring some of the hot soup together with the cream. Stir tempered cream into the slow cooker. Stir in the cheese and let it melt. 
  6. Ladle into bowls and serve topped with some bacon crumbles, if desired.
