Diet Friendly Soup
This soup has few calories but a lot of taste. With ground turkey and lots of vegetables it has plenty of protein, nutrients and fiber. If you’re trying to eat healthier and lighter this would be a great option for dinner or lunch. I had it for both 😋!
This would definitely work on a weight watchers plan and could possibly have 0 points (depending what plan you are on). This recipe is also gluten-free and dairy-free. Although, I do love to add a tablespoon of shredded parmesan on top of my bowl of soup.
If you’re looking to make this soup a little heartier try adding in a half cup of uncooked white rice before pressure cooking or a couple cups of cooked orzo or ditalini pasta after pressure cooking. Other options would be cooked barley, cooked quinoa, corn or black beans.
Ingredients/Substitution Ideas
- Lean ground turkey–you can also use ground beef or ground chicken
- Yellow onion–or white onion
- Celery
- Mushrooms
- Garlic powder
- Kosher salt
- Black pepper
- Dried thyme leaves
- Dried rosemary leaves
- Rubbed sage
- Crushed red pepper flakes
- Water
- Better than Bouillon Vegetable Base–or chicken base. I personally think the vegetable base works best for this soup.
- Carrots
- Frozen green beans–or fresh green beans
- Crushed tomatoes–I love crushed tomatoes in soups because of the consistency. But you can also use 1 (14.5 oz) can of diced tomatoes and 2 (8 oz) cans of tomato sauce
- Red bell pepper–or green, orange, yellow
Steps
Prepare your onion, celery and mushrooms. Turn Instant Pot to saute setting. When display says HOT add in the ground turkey and break it up. Brown for 3 minutes.
Then add in the onion, celery and mushrooms. Brown for about 3 more minutes. Stir in the garlic powder, salt, pepper, thyme, rosemary, sage and red pepper.
Pour in the water and Better than Bouillon and scrape bottom of pot so that nothing is sticking.
While the broth is heating up on the saute setting prepare your other vegetables. Then stir in the carrots, beans, tomatoes and bell pepper. Turn off saute setting.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
Ladle into bowls and serve. Top with a bit of parmesan cheese, if desired.
Notes/Tips
- I served this soup with a grilled cheese sandwich. My son loved dipping his sandwich into his soup. You can also serve with cornbread or dinner rolls. If you’re trying to cut down on carbs try serving it with a side of cottage cheese.
- Feel free to substitute veggies that you like and have on hand. Some choices might be cauliflower florets, chopped cabbage, spinach, shallot, broccoli.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. For the 3 quart pot the recipe needs to be cut in half.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 pound lean ground turkey
- 1 medium yellow onion, diced
- 3 ribs of celery, diced
- 8 ounces sliced mushrooms
- 2 tsp garlic powder
- 3/4 tsp kosher salt

- 6 cups water
- 2 Tbsp Better than Bouillon Vegetable Base

- 1 (12 oz) bag frozen green beans
- 1 (28 oz) can crushed tomatoes
- 1 red bell pepper, cored and diced

Slow Cooker Instructions:
- Prepare your onion, celery and mushrooms. Heat a pan over medium high heat. Add in the ground turkey and break it up. Brown for 3 minutes. Then add in the onion, celery and mushrooms. Brown for about 5 minutes. Stir in the garlic powder, salt, pepper, thyme, rosemary, sage and red pepper. Transfer to the slow cooker.
- Add in the water, Better than Bouillon, carrots, beans, tomatoes and bell pepper.
- Cover and cook on LOW for 4-6 hours or HIGH for 3-4 hours.
- Ladle into bowls and serve. Top with a bit of parmesan cheese, if desired.
