Father-In-Law’s Soup–Instant Pot or Crockpot soup with pork, cabbage, corn and potatoes. An easy, hearty soup!

Father-In-Law’s Soup
Father-in-Law’s soup has tender bites of pork with lots potatoes, corn, cabbage and a delicious broth. You’re going to love how this soup has lots of nutrition and tons of flavor. The bites of pork are ultra tender. Both my boys loved this soup and are happy that there are leftovers for lunch tomorrow.
This recipe is adapted from Group Recipes. The original author stated that this stew was something her father-in-law loved to make. I changed the recipe up and used the Instant Pot/Crockpot to make it.
Ingredients/Substitution Ideas
- Olive oil
- Onion
- Water
- Better than Bouillon chicken base
- Pork loin country style ribs–or pork loin or boneless skinless chicken thighs
- Salt
- Pepper
- Garlic powder
- Chili powder
- Smoked paprika
- Russet potatoes
- Cabbage
- Corn–canned or 1 ½ cups frozen corn
- Tomato sauce
Steps
Turn Instant Pot to saute setting. When displays says HOT add in the oil and the onions. Saute for 5 minutes.

Pour in the water and scrape bottom of pot so that nothing is sticking. Stir in the chicken base.
Add in the pork, salt, pepper, garlic powder, chili powder, paprika, potatoes, cabbage, corn and tomato sauce. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes on LOW pressure. When time is up let pot sit for 10 minutes (or more) and then move valve to venting. Remove the lid.

Stir. Ladle into bowls and serve.

Notes/Tips
- Serve with cornbread and honey butter. I love the Mel’s Kitchen Cafe recipe.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. If you want to make this in a 3 quart pot you’ll need to halve the recipe.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ingredients
- 1 Tbsp olive oil
- 1 cup diced onion
- 2 cups water
- 1 Tbsp Better than Bouillon chicken base
- 2 1/2 pounds pork loin country style ribs, cut into 3/4 inch cubes
- 1 tsp salt
- 1 tsp pepper
- 1 1/2 tsp garlic powder
- 1 1/2 tsp chili powder
- 1/2 tsp smoked paprika
- 3 medium Russet potatoes, peeled and cut into 3/4 inch cubes
- 1/2 of a head of cabbage, chopped
- 1 (15.25 oz) can corn, drained (or 1 1/2 cups frozen corn)
- 1 (16 oz) can tomato sauce
Instructions
Instant Pot Instructions:

Slow Cooker Instructions:
- Saute onions in oil in a pan on the stove.
- Add onions, water, pork, salt, pepper, garlic powder, chili powder, paprika, potatoes, cabbage, corn and tomato sauce into slow cooker.
- Cover and cook on low for 6 hours.
- Stir. Ladle into bowls and serve.

Very simple, very tasty. It’s over 100 degrees out here in California but I never of a bowl of soup when I don’t feel like cooking. Plus, it stores well at work for daily lunch in the microwave. I made this day before yesterday and I’ve enjoyed it. My only change was to add chopped carrots. Delicious, thank you.
