Western Missouri Casserole

This one skillet meal is hearty and filling and delicious! It’s got beef, kidney beans, corn and green beans in a chili tomato sauce and it’s baked with a cornbread topping that has been sprinkled with cheese. You’re going to love how easy this one pot meal is to put together and that you’ll only have a few dishes to clean! Make sure to watch the youtube video below to see me making the recipe.

This recipe has been adapted from CDKitchen.

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7, or ground turkey
  • Dry minced onion–or a half cup diced fresh onion
  • Chili powder
  • Kosher salt
  • Black pepper
  • Smoked paprika
  • Garlic powder–or granulated garlic
  • Tomato sauce
  • Salsa–or picante sauce
  • Corn–canned or frozen
  • Kidney beans–or pinto, black
  • Green beans–canned, frozen or fresh
  • Jiffy corn muffin mix–you can also make your own cornbread batter from scratch
  • Milk
  • Egg
  • Cheddar cheese–I like sharp

Notes/Tips

  • We served this as a one skillet meal but if you’d like to serve something on the side consider some fresh fruit, green salad or raw veggies and dip.
  • I used my 6 quart oven safe to 350 degrees Farberware pan*. You can also use a cast iron pan*. If you don’t have an oven safe pan you can transfer the beef mixture to a baking dish and then add cornbread batter on top and bake.
  • Measuring spoons I love*.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Well seasoned ground beef with beans, corn and salsa topped with a cheesy cornbread topping.


Ingredients

Scale
  • 1 pound lean ground beef
  • 2 Tbsp minced dry onion
  • 1 Tbsp chili powder
  • 1 tsp kosher salt
  • 1 tsp pepper
  • 1/8 tsp smoked paprika
  • 1 1/2 tsp garlic powder
  • 2 (8 oz) cans tomato sauce
  • 1/2 cup salsa or picante sauce
  • 1 (15 oz) corn, drained
  • 1 (15 oz) kidney beans, rinsed and drained
  • 1 (15 oz) can green beans, drained
  • 1 (8.5 oz) box Jiffy corn muffin mix
  • 1/3 cup milk
  • 1 egg
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Heat oven to 350 degrees F.
  2. Heat an oven safe pan* over medium high heat. Add in the ground beef and break it up. Add in the onion, chili powder, salt, pepper, paprika and garlic powder. Brown for about 5 minutes. 
  3. Stir in the tomato sauce, salsa, corn, kidney beans and green beans. Turn to low and let simmer.
  4. In a bowl stir together corn muffin mix, milk and egg. Spoon the batter over the beef mixture. Use a spatula to spread out as best as possible.
  5. Bake for 35 minutes. Sprinkle cheese on top and bake for 5 more minutes.
  6. Serve and enjoy.

    Hi Karen,
    It seems like a short time ago you posted a recipe for a pork tenderloin made in the Instant Pot. It was really good & I seemed to have misplaced the recipe.
