Description

Instant Pot or Crockpot soup with pork, cabbage, corn and potatoes. An easy, hearty soup!


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 2 cups water
  • 1 Tbsp Better than Bouillon chicken base
  • 2 1/2 pounds pork loin country style ribs, cut into 3/4 inch cubes
  • 1 tsp salt
  • 1 tsp pepper
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 3 medium Russet potatoes, peeled and cut into 3/4 inch cubes
  • 1/2 of a head of cabbage, chopped
  • 1 (15.25 oz) can corn, drained (or 1 1/2 cups frozen corn)
  • 1 (16 oz) can tomato sauce

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When displays says HOT add in the oil and the onions. Saute for 5 minutes. 
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Stir in the chicken base. 
  3. Add in the pork, salt, pepper, garlic powder, chili powder, paprika, potatoes, cabbage, corn and tomato sauce. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes on LOW pressure. When time is up let pot sit for 10 minutes (or more) and then move valve to venting. Remove the lid.
  5. Stir. Ladle into bowls and serve. 

Slow Cooker Instructions:

  1. Saute onions in oil in a pan on the stove.
  2. Add onions, water, pork, salt, pepper, garlic powder, chili powder, paprika, potatoes, cabbage, corn and tomato sauce into slow cooker.
  3. Cover and cook on low for 6 hours.
  4. Stir. Ladle into bowls and serve.
