Description
Instant Pot or Crockpot soup with pork, cabbage, corn and potatoes. An easy, hearty soup!
Ingredients

- 1 Tbsp olive oil
- 1 cup diced onion
- 2 cups water
- 1 Tbsp Better than Bouillon chicken base
- 2 1/2 pounds pork loin country style ribs, cut into 3/4 inch cubes
- 1 tsp salt
- 1 tsp pepper
- 1 1/2 tsp garlic powder
- 1 1/2 tsp chili powder
- 1/2 tsp smoked paprika
- 3 medium Russet potatoes, peeled and cut into 3/4 inch cubes
- 1/2 of a head of cabbage, chopped
- 1 (15.25 oz) can corn, drained (or 1 1/2 cups frozen corn)
- 1 (16 oz) can tomato sauce
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When displays says HOT add in the oil and the onions. Saute for 5 minutes.
- Pour in the water and scrape bottom of pot so that nothing is sticking. Stir in the chicken base.
- Add in the pork, salt, pepper, garlic powder, chili powder, paprika, potatoes, cabbage, corn and tomato sauce. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes on LOW pressure. When time is up let pot sit for 10 minutes (or more) and then move valve to venting. Remove the lid.
- Stir. Ladle into bowls and serve.
Slow Cooker Instructions:
- Saute onions in oil in a pan on the stove.
- Add onions, water, pork, salt, pepper, garlic powder, chili powder, paprika, potatoes, cabbage, corn and tomato sauce into slow cooker.
- Cover and cook on low for 6 hours.
- Stir. Ladle into bowls and serve.
