Farmhouse Beef Casserole–an easy ground beef dinner with potatoes, cabbage, tomatoes, taco sauce and melted cheddar cheese made in the Instant Pot or slow cooker.

Farmhouse Beef Casserole
I loved how easy this one-pot meal was to throw together, and the best part is that you can make it in either the Instant Pot or the slow cooker depending on what your day looks like. The cabbage cooks down until it’s tender and the potatoes make the meal filling enough that you don’t need to serve it over rice. It’s also a great way to sneak in extra vegetables without anyone complaining! If you’d like, you can add diced carrots, celery or sliced mushrooms when you brown the beef for even more veg. This is one of those dinners that’s made with everyday ingredients and is perfect for busy weeknights. Enjoy!
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Onion–or frozen diced onion or shallot
- Kosher salt
- Black pepper
- Garlic powder–or 1 Tbsp minced fresh garlic
- Chili powder
- Smoked paprika–or regular paprika
- Chicken or beef broth–or water with better than bouillon
- Cabbage
- Potatoes–or Yukon Gold or red potatoes
- Petite diced tomatoes–or regular diced tomatoes
- Taco sauce–or salsa
- Shredded cheddar cheese–or Monterey Jack, Colby Jack or a Mexican cheese blend
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, chili powder and paprika.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Dump in the cabbage, potatoes, tomatoes and taco sauce in that order. Don’t stir.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir in the cheddar.

Serve and enjoy!


Notes/Tips
- Serve with green beans and cornbread to round out the meal.
- Using bagged coleslaw mix instead of chopping cabbage saves prep time.
- Freshly shred your cheese if possible. It melts more smoothly than pre-shredded cheese.
- This recipe is gluten free. Just make sure to check your taco sauce label.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for 3-4 days. You can freeze leftovers for up to 3 months. Keep in mind the potatoes will be a little softer after thawing.

- 16 oz lean ground beef
- 1/2 cup diced onion

- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, chili powder and paprika. Transfer to the slow cooker.
- Stir in the broth, cabbage, potatoes, tomatoes and taco sauce.
- Cover slow cooker and cook on low for 4 hours, or until potatoes are tender.
- Stir in the cheddar.
- Serve and enjoy!
