Description

Seasoned shredded chicken, frozen vegetables, Cheddar Bay Biscuit Mix, and a creamy chicken gravy for a comforting one-pan dinner.

Ingredients

Scale
  • 3-4 cups of cooked, shredded or chopped chicken (I did this in the Instant Pot)
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp poultry seasoning
  • Pinch of smoked paprika
  • 1/2 cup melted butter
  • 12 oz frozen mixed vegetables
  • 2 cups Red Lobster biscuit mix (1 pouch)
  • 3/4 cups milk
  • 1 cup shredded cheddar cheese, divided
  • 1 3/4 cups chicken broth
  • 1 (10.5 oz) can cream of chicken soup

Instructions

  1. Heat oven to 350° F.
  2. In a bowl stir together the chicken, salt, pepper, garlic powder, onion powder, poultry seasoning and smoked paprika.
  3. Add the melted butter into the bottom of a 9×13 inch pan. Place the chicken into the pan. Layer the vegetables on top.
  4. In a bowl stir together the biscuit mix, seasoning packet, milk and ½ cup of cheddar. Scoop the mixture over the top of the veggies. (I used an ice cream scoop).
  5. In a bowl whisk the broth and chicken soup together. Pour the mixture over the top of the pan. Don’t stir.
  6. Bake for 50 minutes. Sprinkle remaining cheese on top and bake for 5 more minutes.
  7. Serve and enjoy!
