Anything Casserole–a customizable one-pot Instant Pot casserole featuring smoked sausage, rice, veggies, and cheese for an easy meal that you can make with whatever you have on hand.

Anything Casserole
When you’re feeling creative but need a few guidelines this “recipe” is right for you. It’s a loose, basic recipe for a sausage, rice and veggie dish that you can make in your Instant Pot tonight for dinner. Make it with anything you have on hand, get creative and have fun!
Ingredients/Substitution Ideas
- Olive oil–or canola, vegetable
- Beef smoked sausage–or kielbasa, andouille, ham cubes, ground sausage
- Onion–or shallot, or 1 Tbsp dried onion
- Chicken broth–or water and Better than Bouillon chicken base, vegetable broth, beef broth
- Converted rice–or long grain white, basmati, jasmine
- Kosher salt
- Smoked paprika
- Black pepper, sage, rosemary, ground thyme, garlic powder–or another mixture of seasonings you like
- Celery–or green/red bell pepper
- Carrots–or 1 cup green beans
- Cabbage–or mushrooms
- Tomato sauce–or 2 Tbsp tomato paste or a can of diced tomatoes
- Sharp cheddar–or colby, pepper jack, monterey jack
Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and brown for 2 minutes on each side. Add in the onion and saute for 3 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the rice. Add in salt, paprika, pepper, sage, rosemary, thyme, garlic powder, celery, carrots, cabbage and tomato sauce. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Sprinkle on the cheese and let it melt. Serve and enjoy!


Notes/Tips
- Serve with a simple green salad and vinaigrette dressing.
- This recipe is gluten free.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 1 Tbsp olive oil (or canola, vegetable)
- 1 (12 oz) package beef smoked sausage (or kielbasa, andouille, ham cubes, italian sausage)
- 1/2 cup diced onion (or shallot, or 1 Tbsp dried onion)
- 2 1/4 cup chicken broth (or water and Better than Bouillon chicken base, vegetable broth, beef broth)
- 1 1/2 cups converted rice (or long grain white, basmati, jasmine)
- Pinch of kosher salt
- Pinch of smoked paprika
- 1/2 tsp each black pepper, sage, rosemary, ground thyme, garlic powder (or another mixture of seasonings you like)
- 2 ribs of celery, diced (or green bell pepper)
- 2 carrots, peeled and sliced (or 1 cup green beans)
- 2 cups chopped cabbage (or 4 ounces sliced mushrooms)
- 1 (8 oz) can tomato sauce (or 2 Tbsp tomato paste or a can of diced tomatoes)
- 1 cup shredded sharp cheddar (or colby, pepper jack, monterey jack)
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and brown for 2 minutes on each side. Add in the onion and saute for 3 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice. Add in salt, paprika, pepper, sage, rosemary, thyme, garlic powder, celery, carrots, cabbage and tomato sauce. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Sprinkle on the cheese and let it melt. Serve and enjoy!
