Description
An easy Instant Pot meal with smoked sausage, Spanish rice, tomatoes, mushrooms and zucchini.
Ingredients

- 1 Tbsp olive oil
- 1 (12 oz) package beef smoked sausage, sliced
- 1 cup diced onion
- 4 oz sliced mushrooms
- 3 cups chicken broth
- 2 (6.8 oz) packages Rice-a-Roni Spanish Rice
- 1 (15 oz) can crushed tomatoes
- 1 cup finely shredded zucchini
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the smoked sausage and brown for about 3 minutes. Add in the onions and mushrooms and saute for 3 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the Rice-A-Roni. Dump tomatoes over the top. Sprinkle the seasoning packet over the top of the tomatoes.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the zucchini. Serve and enjoy.
