Instant Pot/Crockpot Dude Catching Chicken

Dude Catching Chicken

This chicken is so tasty and simple you and your man (or woman) are going to love it! You may even have all of the ingredients you need at home to make it right now. I am not a sweet meat kind of person so if you are worried about it being too sweet because of the maple syrup don’t be. It’s just right!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon
  • Chicken tenderloins–frozen or fresh. For other cuts of chicken see the notes section.
  • Salt and pepper
  • Dijon mustard
  • Maple syrup–yes use real maple syrup for best flavor
  • Red wine vinegar
  • Dried rosemary leaves
  • Cornstarch

Steps

Pour chicken broth into Instant Pot. Add the chicken tenderloins into the bottom of the pot. Salt and pepper the chicken.

In a small bowl whisk together the mustard, maple syrup, red wine vinegar and rosemary.

Pour the mixture over the chicken.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes for fresh or 3 minutes for frozen chicken.

When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

In a small bowl stir together cornstarch and 3 tablespoons of water until smooth. Turn Instant Pot to saute setting. Stir the cornstarch slurry into the pot. The sauce will thicken quickly. Turn off the pot.

Serve chicken and enjoy!

Notes/Tips

  • Serve with a side of broccoli and some rice pilaf or mashed potatoes.
  • Variation: Add cheese! Cheese makes everything taste better. Try adding a few slices of mozzarella or provolone on top of the cooked chicken and letting it melt.
  • You can also make this with chicken thighs or breasts. Use a 12 minute pressure cook time. I do like the tenderloins best because they stay moist and tender and cook so quickly. I like buying frozen chicken tenderloins in the big bag at Costco (not Sams…they aren’t good).
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • This recipe is gluten-free and dairy-free.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with maple syrup are Pancake Bites and Kentucky Beef.

Ingredients

  • 1/2 cup chicken broth
  • 1 1/2 pound chicken tenderloins (frozen or fresh)
  • Salt and pepper

  2. In a small bowl whisk together the broth, mustard, maple syrup, red wine vinegar, rosemary and cornstarch. Pour the mixture over the chicken.
  3. Cover and cook on low for 2-3 hours. 
  4. Serve chicken and enjoy!

    Can I double this recipe to have leftovers to freeze? How long should I cook if I do? Can I add more liquid ingredients for lots of sauce? My mouth is watering! I can’t wait to try it!

      Yes you can double this recipe easily. Double ingredients keep same cooking time. You can also just double the sauce if you’d like to do that!

    Looks so yummy! If I cut my fresh boneless thighs into 4-5 pieces I can still do the 2 min cook time, right?
