Cheesy French Onion Beef Potato Casserole–an easy Instant Pot or slow cooker stew-like dinner made with tender potatoes, savory ground beef, caramelized onions, smoky Gouda.

Cheesy French Onion Beef Potato Casserole
This recipe has the flavors of French onion soup with ground beef and potatoes. The smoked Gouda gives the sauce such a rich flavor. I also love that you can make this in either the Instant Pot or the slow cooker depending on what works best for your day. If you’re a fan of meat-and-potatoes dinners, I think you’ll enjoy this one. Ingredients/Substitution Ideas
- Lean ground beef
- Onions–yellow onions or sweet onions
- Salt and pepper
- Water–only needed for the Instant Pot version
- French onion soup–I used Campbell’s brand
- Russet potatoes–Yukon Gold potatoes
- Smoked Gouda cheese–or Gruyère
- Mozzarella cheese–I am loving whole milk mozzarella lately…it is so much better than low fat
- Worcestershire sauce
- Cornstarch
- Sour cream (optional topping)
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease. Stir in a pinch of salt and pepper.

Pour in the water and scrape bottom of pot so that nothing is sticking.
Dump in the french onion soup and potatoes.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up move valve to venting and remove the lid.

Stir in the gouda, mozzarella and Worcestershire.
To thicken make a cornstarch slurry by stirring together cornstarch and cold water in a small bowl until smooth. Turn Instant Pot to sauté setting and stir the slurry into the pot to thicken the sauce. Once thickened turn off Instant Pot.

Serve and enjoy! Top with a dollop of sour cream, if desired.

Notes/Tips
- Serve with green beans or peas.
- I used my 6 quart Instant Pot*. You can also make this in an 3, 4 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. You can freeze leftovers for up to 2 months.

- 1 cup thinly sliced onions
- Salt and pepper
- 1/3 cup water
- 1 (10.5 oz) can french onion soup
- 16 oz Russet potatoes, peeled and cut into 1/2 inch cubes
- 2 oz shredded smoked gouda
- 2 oz shredded mozzarella
- Splash of Worcestershire sauce
- 2 Tbsp cornstarch

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease. Stir in a pinch of salt and pepper. Transfer to the slow cooker.
- Stir in the french onion soup and potatoes (no water for slow cooker version).
- Cover and cook on low for 3-4 hours, or until potatoes are tender.
- Stir in the gouda, mozzarella and Worcestershire.
- To thicken make a cornstarch slurry by stirring together cornstarch and cold water in a small bowl until smooth. Stir the slurry into the slow cooker to thicken the sauce. Let cook for about 10 minutes with the lid off.
- Serve and enjoy! Top with a dollop of sour cream, if desired.
