Description

An easy Instant Pot or slow cooker dinner made with ground beef, potatoes, corn, tomatoes and melty mozzarella cheese.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1 small onion, halved and sliced
  • 2 tsp Montreal steak seasoning, divided
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tsp Worcestershire sauce
  • 1/2 cup beef broth
  • 2 large Russet potatoes, peeled and cut into cubes
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 (4 oz) can diced green chiles
  • 1 (15.25 oz) can corn, drained
  • 1 Tbsp cornstarch
  • 1 cup shredded mozzarella cheese

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in 1 tsp of the steak seasoning, garlic powder, Italian seasoning and Worcestershire sauce. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add in the potatoes. Sprinkle them with the remaining 1 tsp of steak seasoning. Then add in the tomatoes, green chiles and corn.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid. 
  5. In a small bowl stir together cornstarch with 1 Tbsp of cold water. Turn Instant Pot to saute setting and stir the slurry into the pot to thicken the sauce. Once thickened turn off Instant Pot.
  6. Stir in the mozzarella. 
  7. Serve and enjoy!

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in 1 tsp of the steak seasoning, garlic powder, Italian seasoning and Worcestershire sauce. Transfer to the slow cooker
  2. Stir in the broth and potatoes. Sprinkle potatoes with the remaining 1 tsp of steak seasoning. Then add in the tomatoes, green chiles and corn.
  3. Cover and cook on low for 3-4 hours.
  4. In a small bowl stir together cornstarch with 1 Tbsp of cold water. Stir the slurry into the slow cooker to thicken the sauce. Let cook without the lid on high for 10 minutes. 
  5. Stir in the mozzarella. 
  6. Serve and enjoy!
