When you make something with mushrooms in it and your kid who “doesn’t like mushrooms” eats it happily you’re winning! Haha! I did a sneaky mom thing. I chopped up the mushrooms in this hot beef sandwich and my kid didn’t even know. Everyone LOVED these sandwiches. The filling is soooo yummy.

  • Make this hot beef and cheese sandwich filling in the Instant Pot or slow cooker it’s up to you. For the slow cooker version you won’t need the broth or the cornstarch.
  • You can use lean ground beef or ground turkey
  • Montreal steak seasoning gives the beef really good flavor. If you don’t have this seasoning on hand you can make your own.
  • By chopping up the mushrooms you can hide them from the kids. Plus it bulks up the recipe without adding extra meat.
  • I cut the green peppers in a larger chop because I didn’t want them to disintegrate after being pressure cooked.
  • Use any kind of cheese that you like. Try monterey jack, pepper jack, colby, sharp cheddar etc.
  • You can serve this on buns, rolls, lettuce wraps or over rice. It’s all good!
  • I used my 3 quart pot. This works in the 6 or 8 quart pot as well. I only used a half cup broth because the mushrooms release a lot of moisture. If you’re worried about your pot coming to pressure add in an extra half cup of broth.
  • This recipe is easy to double or triple! Keep the same amount of broth if you double it (but double all the other ingredients). And use cornstarch to thicken only as needed.
  • Make it instead of sloppy joes at a family dinner!
  • Store leftover meat filling in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

A toasted hoagie bun with a pile of cheesy beef, mushrooms and green peppers. This recipe is easy to double and make for a crowd.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 2 tsp Montreal Steak Seasoning
  • 1 tsp poultry seasoning
  • 1 tsp garlic powder
  • 1 Tbsp Worcestershire sauce
  • 1/2 cup beef broth
  • 8 oz chopped mushrooms
  • 1 green bell pepper, cored and diced
  • 2 Tbsp cornstarch
  • 1 1/2 cups shredded cheddar cheese
  • 4–6 hoagie buns

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to sauté setting. When the display says HOT add in the beef and break it up. Add in the onions. Brown for about 5 minutes. Drain off any excess grease. Stir in the steak seasoning, poultry seasoning, garlic powder and Worcestershire sauce.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Dump mushrooms on top of meat. Then add the peppers on top of the mushrooms.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Stir some of the juices from the Instant Pot in with the cornstarch in a small bowl until smooth. Turn Instant Pot to saute setting and stir in the cornstarch slurry.
  6. Stir in the cheese. Once meat filling is thickened turn off Instant Pot.
  7. Scoop meat filling on top of toasted hoagie buns. Eat and enjoy!

Slow Cooker Instructions:

  1. Brown the ground beef and sauté the onions on the stove. Drain off any excess grease. Stir in the steak seasoning, poultry seasoning, garlic powder and Worcestershire sauce. Add mixture into slow cooker.
  2. Stir in the mushrooms and peppers.
  3. Cover and cook on low for 3-4 hours.
  4. Remove the lid and stir in the cheese.
  5. Scoop meat filling on top of toasted hoagie buns. Eat and enjoy!

This is another winner, Karen! I made this tonight and we really enjoyed the rich flavor of the meat. The only thing I did differently was to not add the cheese, but just let each person add their own to the top….saves me calories!

I followed this recipe exactly and also added a sliced up Serrano pepper with the bell pepper. This turned out really good. I’ll probably use the leftover meat for nachos.
