Disappearing Chicken

This chicken will vanish quicker than you can say abracadabra! It is very simple to throw together and totally delicious. It has tons of flavor from the green chiles, and the creamy mixture made with cream cheese, sour cream and cottage cheese is lick-off-your-plate good. I served this up to my daughter and her roommates and they all agreed that it was the best and they requested the recipe.

Ingredients/Substitution Ideas

  • Cooked shredded or sliced chicken–I used leftover cafe rio chicken, another option is rotisserie chicken or seasoned shredded chicken
  • Cream cheese
  • Cottage cheese–I used large curd, full fat
  • Sour cream–I used full fat
  • Diced green chiles–I used mild
  • Garlic salt
  • Chili powder
  • Black pepper
  • Cumin
  • Sharp cheddar cheese–or another type of cheese like monterey jack or colby

The Basic Steps…

  • Whisk together the cream cheese, cottage cheese and sour cream until creamy.
  • Stir in the green chiles, garlic salt, chili powder, black pepper, cumin and half of the cheese. Stir in the chicken and coat well. 
  • Scrape the mixture into the 9×9 inch pan. Sprinkle with the remaining cheese.
  • Bake for 50 minutes.

Notes/Tips

  • I served this chicken over a box of Zatarain’s cilantro lime rice. I used my Instant Pot to cook the rice (Add contents of box to Instant Pot with 2 cups of water and cook for 3 minutes on high pressure with a 10 minute natural pressure release).
  • You can also serve this with tortilla chips as a dip, or rolled up in a flour tortilla as a burrito.
  • Serve alongside roasted broccoli.
  • This recipe is gluten free.
  • This recipe is low-carb.
  • I baked this chicken in a 9×9 inch pyrex glass baking dish*.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months (although you probably won’t have leftovers!).

Description

Flavorful, creamy, cheesy chicken with green chiles that will vanish in seconds. 


Ingredients

Scale
  • 4 cups cooked shredded chicken (I used leftover cafe rio chicken, another option is rotisserie chicken or seasoned shredded chicken)

  • 1/2 cup sour cream
  • 2 (4 oz) cans diced green chiles (I used mild)
  • 1/2 tsp garlic salt
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1 cup shredded sharp cheddar cheese, divided

Instructions

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl whisk together the cream cheese, cottage cheese and sour cream. Stir in the green chiles, garlic salt, chili powder, black pepper, cumin and half of the cheese. Stir in the chicken and coat well. 
  3. Scrape the mixture into the 9×9 inch pan. Sprinkle with the remaining cheese.
  4. Bake for 50 minutes. 
  5. Serve chicken and sauce over rice.

    This was delicious and super easy. The first night we ate over brown rice, the second night we ate over noodles w steamed broccoli. Both meals were delicious
