Flavorful, creamy, cheesy chicken with green chiles that will vanish in seconds.

- 4 cups cooked shredded chicken (I used leftover cafe rio chicken, another option is rotisserie chicken or seasoned shredded chicken)
- 4 ounces softened cream cheese
- 1/2 cup cottage cheese
- 1/2 cup sour cream
- 2 (4 oz) cans diced green chiles (I used mild)
- 1/2 tsp garlic salt
- 1/2 tsp chili powder
- 1/2 tsp black pepper
- 1 tsp cumin
- 1 cup shredded sharp cheddar cheese, divided
Instructions
- Preheat oven to 350 degrees.
- In a mixing bowl whisk together the cream cheese, cottage cheese and sour cream. Stir in the green chiles, garlic salt, chili powder, black pepper, cumin and half of the cheese. Stir in the chicken and coat well.
- Scrape the mixture into the 9×9 inch pan. Sprinkle with the remaining cheese.
- Bake for 50 minutes.
- Serve chicken and sauce over rice.
