Illinois Casserole–baked egg noodle casserole with a creamy cottage cheese and sour cream sauce made in your Instant Pot.
Illinois Casserole
Today’s recipe comes from Illinois Country Living. I was unsure of how this noodle casserole would taste but I loved it! The mixture of sour cream, cottage cheese, Worcestershire, hot sauce and poppy seeds was a definite win. It brought so much flavor and creaminess to the noodles. Tying the dish all together was the melty parmesan cheese on top. This is a great side dish recipe or if you want a meatless meal it’s perfect as a main dish.
Ingredients/Substitution Ideas
- Butter
- Green onion
- Chicken broth–or water and Better than Bouillon
- Egg noodles–or rotini
- Cottage cheese
- Sour cream
- Garlic powder
- Worcestershire sauce
- Kosher salt
- Black pepper
- Poppy seeds
- Hot sauce
- Parmesan–or gruyere cheese
Steps
Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the green onion and saute until tender.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the egg noodles.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting.
In a bowl stir together cottage cheese, sour cream, garlic powder, Worcestershire, salt, pepper, poppy seeds and hot sauce.
Stir the mixture into the noodles in the Instant Pot.
Place air fryer lid on top and set to bake at 325 degrees for 10 minutes. (If you don’t have an air fryer lid you can bake in the oven. You can use your stainless steel Instant Pot liner in the oven if you’d like or you can transfer the mixture to a baking dish. Bake at 350 for 15 minutes, add the cheese and bake for 5 more minutes.)
Sprinkle the cheese on top and bake for 2 more minutes.
Serve and enjoy!
Notes/Tips
- Serve with green salad or roasted vegetables. If you’d like more protein in your meal try adding rotisserie chicken in with the noodles or you can serve a grilled chicken breast or pork chop on the side.
- I bought poppy seeds in the bulk section at Winco.
- I used my Duo Crisp 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Do you by chance have the Illinois Casserole recipe in a slow cooker version?
If not, im guessing it would be cooked on high for 3 hours at most in a slow cooker?
