Dee Dee’s Homerun Chicken–chicken is pressure cooked (or slow cooked) with warm seasonings like cumin, turmeric, and garlic, then simmered in a tomato and chicken base until coated in a flavorful sauce.

Dee Dee’s Homerun Chicken
This chicken turned out so good. Skyler and Greg ate it all up in no time. It’s low carb, high protein and has lots of flavor, but it’s not overpowering. We just ate it all up by itself but it would be good served with rice, pasta or potatoes since there is a lot of yummy sauce. It works both in the Instant Pot and the slow cooker. Try it this week and watch everyone go back for seconds! (This recipe is adapted from Dee Dee’s Home Run Chicken on Food Network).
Ingredients/Substitution Ideas
- Olive Oil–or vegetable, canola
- Sugar
- Coriander
- Cumin
- Garlic Powder
- Kosher Salt
- Dried Oregano
- Black Pepper
- Turmeric
- Split Bone-In Chicken Breasts–or 16 oz chicken thighs
- Water
- Better Than Bouillon Chicken Base
- Tomato Paste
- Chili Powder
Steps
Turn Instant Pot the sauté setting. While pot is heating up combine sugar, coriander, cumin, garlic powder, ½ tsp of salt, oregano, pepper and turmeric in a little bowl or ramekin and stir. Once the pot says HOT add in the oil and swirl it around.
Add in your seasonings and stir in the oil for about 30 seconds to bloom the spices. Stir in the chicken so they coat in the spices.


Pour in the water and scrape bottom of pot. Stir in the chicken base, tomato paste, remaining ½ tsp of salt and chili powder.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 12 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Move chicken to a cutting board. Pull the meat off the bone and discard bones.
In a small bowl stir cornstarch together with 2 Tbsp of cold water until smooth. Turn Instant Pot to sauté setting. Stir the slurry into the pot until sauce thickens.

Stir the chicken into the pot and stir to coat in the sauce.
Serve and enjoy!

Notes/Tips
- Serve with rice, pasta, potatoes, pita or on a toasted bun.
- This recipe is gluten free and dairy free.
- Stir in a little coconut milk or Greek yogurt at the end for a creamy twist.
- I used my 6 quart Instant Pot*. You can also make this in a 3, 4 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Slow Cooker Instructions:
- Combine sugar, coriander, cumin, garlic powder, ½ tsp of salt, oregano, pepper and turmeric in a little bowl or ramekin and stir.
- Coat rub the chicken with the oil. Press the seasonings all over the chicken. Place in the slow cooker.
- Stir water, chicken base, tomato paste, remaining ½ tsp of salt and chili powder into the slow cooker.
- Cover and cook on low for 3 ½ hours.
- In a small bowl stir cornstarch together with 2 Tbsp of cold water until smooth. Stir the mixture into the slow cooker. Cover and cook on low for 30 more minutes.
- Move chicken to a cutting board. Pull the meat off the bone and discard bones.
- Stir the chicken into the pot and stir to coat in the sauce.

Call me stupid but it doesn’t say how much cornstarch to put with two tablespoons of water.
Can this be made with boneless/skinless chicken thighs as well?
Yes I think that would be a good substitute for sure!
