Cheesy Garlic Butter Chicken
My family and I loved this easy chicken dinner! The flavor was so good even though there were only a handful of ingredients. With the butter and garlic, every bite is rich, savory and full of flavor. This is the perfect dish to make if you’ve got fresh chicken breasts in your refrigerator that need to be used up. The leftovers can be eaten for a quick bite of protein at lunch the next day. In fact, you may want to double the recipe just so you can have leftovers. Next time I’m going to squeeze in some fresh lemon juice at the end to make it even better. Enjoy!
Ingredients/Substitution Ideas
- Boneless skinless chicken breasts–or boneless skinless chicken thighs or chicken tenderloins
- Butter–or olive oil or avocado oil
- Garlic–jarred or fresh
- Kosher salt
- Black pepper
- Dried thyme
- Rubbed sage
- Dried rosemary
- Whole milk mozzarella–or provolone, shredded Parmesan
Steps
Slice the chicken across the grain, then cut the strips crosswise into ½-inch bite-size cubes.

Heat a pan over medium high heat. Add in the butter and let it melt.
Add in the chicken and cook for about 5-7 minutes, stirring every couple minutes. Make sure cooked is cooked through and no longer pink in the middle.
Add in the garlic and toss in the butter and juices.

Stir in the salt, pepper, thyme, sage and rosemary. Toss well.

Remove from the heat and stir in the mozzarella cheese.


Serve and enjoy!

Notes/Tips
- Serve over mashed potatoes, noodles, rice, cauliflower rice, or just plain.
- Try adding broccoli, spinach, mushrooms, zucchini or asparagus during the last few minutes of cooking for an easy one-pan meal.
- Freshly shredded mozzarella melts smoother than pre-shredded cheese. And for the best taste use whole milk mozzarella. I used Tilamook.
- This recipe is naturally low carb and gluten-free.
- A squeeze of fresh lemon juice just before serving brightens all of the flavors.
- Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. You can freeze the cooked chicken for up to 2 months, although the texture of the mozzarella may change slightly after thawing.
